About this Cook
I've always been a creative cook - I cook by smell, like the Rat in Ratatouille! I have been single most of my life and have no kids, though, so I've basically eaten like a college student (lots of burritos and stir fry) and haven't done menu planning (except for hosting Christmases and Thanksgiving). I'm trying to be a better day to day cook, learning to make lots of traditional dishes that every mom knows how to make but I've never made. I'm also learning to use a crock pot. I'm trying to make healthier meals - lower in fat, cholesterol, sodium, calories, but not lower in flavor! I joke that when I cook, it's always a special occasion, since I don't do it that often - ha. But when I do cook, it's usually pretty darn good - now if I could just get a little more consistency.
My favorite things to cook
Burritos and Stir Fry! Or things on the grill, since my husband does the actual cooking part, and I just get to do the creative parts, like coming up with a marinade and tasty side dishes. I love Mexican food best, and love cooking up tasty dishes with cilantro and chiles and lime juice.
My favorite family cooking traditions
My mom made the best apple pie, fried chicken, pot roast, vegetable beef soup, pinto beans - she was a country cook, but I never learned! I made my first pot roast only recently, in a crock pot.
My cooking triumphs
Last night - salmon in my own special marinade, the night before, chicken enchiladas, and all the new things I've been trying lately!! Every time I make something good, my husband says I should open a restaurant - ha!
My cooking tragedies
My husband can't think of any, so I guess that's good!!! Ha.

Tex Mex Black Bean Dip
Wow - this is yummy! I used no oil and added a little extra reduced fat Mexican cheese, and extra cilantro and lime juice. As a result, mine was probably a little runnier (and also, my can of black beans had more water than beans! I was thinking of adding more beans, since once I drained the liquid, there was less than 1/2 the can of actual beans, but didn't). This dip is refreshing and very flavorful! Oh, funny - now that I went back to read the recipe, I didn't follow directions at all - ha. I didn't cook anything - just blended all the raw ingredients together, and it was still good! I'll try following directions the next time to see if it's even better. :)

Satay Chicken Pizza
What a great idea!! I used a recipe found on this site for "The Best Thai Peanut Sauce" and added more toppings - roasted red peppers along with the already suggested cilantro and grated carrots. I used a flatbread/wrap for the crust - my local store didn't have pita bread in stock! But I'm glad, because the flatbread was delicious. I will definitely make this again! Next time I'm going to try it with barbecue chicken - I found a recipe for "Rice Vinegar Basting Sauce" that I think would be an excellent compliment to the flavor of this dish.

The Best Thai Peanut Sauce
Very good! I cut the recipe in 1/3 to only make enough for use on the Chicken Satay Pizza recipe. It was great! I, too, lacked some ingredients - I used chili powder and cayenne instead of hot sauce, extra soy and lime because of no fish sauce. No fresh ginger, so I used extra powdered, but I think it would be much better with fresh! Mine came out a little too peanutty (I used old-fashioned peanut butter). I would start with a little less peanut butter next time to get the flavor right for peanut sauce - a little more soy and lime to peanut ratio. I used light coconut milk and perhaps regular would have added more flavor, but I didn't really notice that adding anything. I also added a little onion and honey, because mine seemed to lack something, and the sweetness helped. This was fantastic on the Chicken Satay Pizza recipe on this site - spread on flatbread and topped with chicken, cilantro, green onion, grated carrot and roasted red pepper, then topped with a little cheese to hold it all together. Yum!!
