Cherry Nut Bread

This bread was delicious. I used coconut milk instead of buttermilk, and cherry pie filling instead of maraschino cherries, because that's what I had on hand. The bread was a light pink color from the pie filling, so it made a good Valentine's day treat! I love the pound cake-like consistency.

Chocolate Pecan Pie III

So rich and delicious! I followed the recipe except I mixed in about 1 cup of chopped pecans to make the pie a little deeper, then topped with 1/2 cup of pecan halves. It received rave reviews at Thanksgiving dinner this year!

Pina Colada Cake III

I followed this recipe as written except I didn't have any rum on hand, so I used 2 tablespoons of rum extract and then added water to equal 1/2 cup. I probably should have used a little more rum extract but it still turned out great. I sent some of the cake with my husband to work and his coworkers gave it rave reviews, and several asked for the recipe!
