Butternut Squash Bake

One word: fantastic! I did make it with goat cheese because that's all I had on hand, but I do look forward to trying it with blue cheese. I think it will be amazing! The one thing I would change is browning the breadcrumbs with a little butter before I put them on top, but it was still good without doing that.

Baked Halibut Steaks

Yum!!!! I live in Alaska, so halibut is a staple in our diet. I am always looking for new ways to cook it and this was amazing! I did add mushrooms, but that was my only adjustment. I was a little skeptical abut the feta, but is was fantastic. Will definitely cook again!

Rhubarb Strawberry Jam

Really good, but super sweet...I did as others recommended and used 6 cups of rhubarb and only 2.5 cups of sugar but it is still really sweet. I think that next time I will add less jello mix and add in some fresh strawberries. It was my first time making jam, so it was a good starting point:)
