Highland Toffee
So easy and SO GOOD! My 2 and a half year old son was just dying to try it, so when i cut it into the 4 squares I cut off little bits for us to taste. We ended up eating a whole quarter of it still warm and crumbly with no chocolate or anything! It is pretty sweet, so I decided to use semi-sweet chips over milk chocolate and will def add finely chopped walnuts for a more authentic and complex flavor. This is so quick and easy, and I always have all of the ingredients on-hand. I plan on making it when I have only short notice for visitors coming over as a welcoming treat. Haha.. people will think I am a doting hostess, but it will be a good excuse to make these quick delicious bars. Awesome recipe and thanks so much fo posting this keeper. :)

Sugar Cookie Icing
i was shocked at the naturaly beautiful edges that formed! i decorated gingerbread christmas trees with this icing and painted it on with a brush. it was easy and just fantastic to work with. i can't wait to play around with different extracts (as i used vanilla.. the only thing i had) and i plan on attempting some very fun designs with this icing. i will probably use it for life! i am sure you have to play around with the moist ingredients everytime. that's just the way it goes with some things!

Simply Sensational Truffles
i made these with 2 bags of mint chocolate chips that still equalled 20 oz. i froze the mixture and shaped into balls which i flattened between wax papers with a coffee cup. i dipped them into melted chocolate.. the first came out pretty, but unless i was willing to dirty about 20 forks i need to find a better way! it got too gloopy and hard to manage. i think i will try candy molds next time. i plan on melting chocolate and lining the mold, chilling, adding the filling, and then capping that off with more chocolate. i figure if i briefly chill that in the freezer, they should pop out nicely! THEY TASTE AWESOME BY THE WAY!! also next time - i will try PB chips for the filling. i can't wait to attempt them again! my head buzzes with new flavor ideas!
