My father was in the Air Force, married my Okinawan mother, had my brother and sister, moved to California, and had me. I'm a Military Brat, and spent half my life in Japan, other half in California. Married my Air Force husband, and now I'm in San Antonio.
My favorite things to cook
I love to make salad. Cooking is great, but I love my fresh leafy greens! I add canned sweet corn, cucumbers, boiled eggs, tuna, sausages, tomato, mozzarella... just a whole combination of things to add color and volume. I make my own salad dressings. When I don't have time, I just sprinkle salt, and pepper, and squeeze some lemon. Trust me, it's amazing!
My favorite family cooking traditions
My mom makes the best macaroni salad! She only makes it for Thanksgiving and Christmas. I broke that tradition and started taking it to potlucks and neighbor's houses...
My cooking triumphs
I made a perfect turkey last year(: I had a very annoying and boastful neighbor that also made turkey for another neighbor's party. He was telling anyone and everyone about his technique... injecting it, all the spices and whatever. I brined mine for 3 days in the fridge, massaged it with butter, and baked it upside down for 3/4 of the time, and it was amazing! Levels above his.
My cooking tragedies
Hmm... I accidentally make crunchy rice sometimes... but I'm sure everybody does. I don't know what I did wrong, but one time when the bread dough was rising in the bread maker, it overflowed and dough got all over the outside of the bread pan. It was hard to clean up. Today, (11/02/09)I accidentally bought parsley instead of cilantro. Even after tasting it and realizing it's parsley, I still think it looks like cilantro!! I'm in shock!! That's what I get for not reading the sign and assuming.

Hominy Beef Bake
I used a vegetable chili w/ beans, because it already had a pound of beef in it. I'm allergic to Lay's, so I'm afraid to use Fritos (something about the oil), and decided to skip the corn chips and just served it with brown rice. I did not use any water. The 3 tsp of chili powder was too much, making the flavor dominant. Please cut back when making this. Maybe to 1 tsp. I wish I would've tasted it as I was adding the chili powder. Definitely would be better with cheese.

Artichoke Spinach Lasagna
I used "no boiling required" lasagna noodles, and it still came out juicy. I will cut down on the veg broth next time. I took a reviewer's advice about cutting back on fresh rosemary, and I used about 1 tsp, and it was noticeable, so I'm glad I did not use a tbsp. Other than that, it was pretty tasty. I will make this again, and next time it will be perfect.

Flavorful Beef Stir-Fry
The sauce is great. I used apple juice. I omitted the peas and water chestnuts, and added garlic powder and ginger. This was my third time making this. The first time, the cornstarch was like glue. By the time I added the vegetables, there was no sauce to coat them with. The second time I made this, I threw out all of the excess marinade, cooked the beef, made the marinade again, and added it at the end of cooking. For anyone that's not familiar with the power of cornstarch: cook beef, toss in vegetables, take the pan off the stove, add cornstarched marinade (coating everything), then return to the stove and stir till sauce thickens. This time, 3rd time, I cooked everything on medium-low, nice and slow, and it turned out fine, but I liked the way it turned out the second time better.
