Baked Mac and Cheese for One
Excellent flavor and quantity. As a widow living alone I hesitate to cook many things owing to the amount of leftovers I will be faced with. This made just enough for dinner and a hearty lunch serving the next day. Terrific!

Spinach-Stuffed Bread
While my guests, and I, really enjoyed the flavor of this very much it was a bit 'soggy' after cooling. I had left the spinach in the collander for over an hour anticipating the moisture might be problimatic....but even with all the draining and hearty squeezing after that it still seemed too 'watery' for the bread to support. Anyone else have this problem and how did you get around it Overall however, very tasty indeed!

BLT Pasta Salad
I absolutely love this recipe! I used fresh grape and cherry tomatoes from the garden, plenty of onion aned a few diced fresh peppers in the mix. Not a big fan of ranch myself so I used it about half and half with mayo. Oh, the next time I made it I also threw in a handful of shredded mild cheddar. This is a real keeper in my house!
