Minestrone Soup I

I got rave reviews for this soup and was asked by many for the recipe. The changes I made were: I used chicken broth vice beef broth. I used tomato sauce instead of ketsup. and I used fresh tortellini instead of frozen. I used chicken jalapeno sausage links, sliced without the casing. It give the soup just a little kick to warm the tummy on a cold winter day. Will definitely make again.

Swiss Chicken Casserole II

I thought this dish was very good and my hd loved it. Per other reviews, I made the following changes: Used white wine in place of milk. This is what gave the flavor to the dish. Also sprinkled salt, pepper, garlic-garlic and onion flakes on the chicken. Mixed the stuffing with the melted butter before placing on top of chicken and uncovered for 10 mins after cooking covered for 50 mins. Will make again.

Spinach Stuffed Chicken Breasts

My Oh My! What an awesome recipe! It was absolutely yummy. I had five thin sliced chicken breasts so I placed appx one tablespoon mixture on the chicken breast, after I had sprinkled garlic, garlic and onion powder over the breast. I used crumbled herb and feta cheese for more flavor and I used a 10 oz. package of steamed spinach. Instead of bacon, I used proscuitto wrapped around the breast. Cooked it covered at 350 for 30 mins., uncovered and upped the temp to 375 for the last 15 mins. This is the best! Will be making again, and again.

Grandmother's Buttermilk Cornbread

This is an excellent cornbread. Made it as directed in recipe. I did, however, find that it was more of a cake like consistency than what I have had for cornbread at restaurants. Will do again but I also am looking for cornbread with more of a crumbly consistency. Any ideas?

Burrito Pie

Took this to a birthday party last night and I got rave reviews. After reading other reviews, here are the changes I made. I added a package of taco seasoning to the beef while cooking. I also added some cumin. I used salsa instead of taco sauce and used mexican cheese instead of colby cheese. I used two tortillas together spreading the refried beans betweeen both tortillas. Because of all the reviews I thought this dish would be a lot juicier that it was. I do not think a double layer of tortillas was necessary because I thought it was a little to dry. Will make again using only one layer of tortillas.

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

I served this at a get together last night and everyone enjoyed it. I did not double the hot sauce only because one of the individuals does not care for anything too spicy. I did add some fried onions on top of the chicken. Very good will make again.

Black Bean Salsa Soup

OMG what can I say. This was outstanding. I made this soup for a birthday party last night and everyone went crazy over it. The only change I made was to use 2 - 10 oz cans of Rotel tomatoes instead of 1 - 14.5 can cause that is what I had on hand and I did not want to waste the leftover tomatoes. Each person added freshly grated Parmesan cheese to their liking and I had sour cream available for those who wanted it. My only suggestion is, if you do not like hot (spicy) soup, either decrease the amount of cayenne pepper or do not use at all. Will definitely make again and again. Thanks for the GREAT recipe.

Taco Lasagna

I made this dish for a birthday party last night and it was a big hit with everyone. I made a few changes per other reviewers - I used ground turkey instead of beef, used 1/4 teas. cayenne pepper and only 1 teas. chili powder. I used flour tortillas instead of corn and I added a can of refried beans to the ground turkey once it was cooked. Will be making again.

Super Duper Bean Salad

I made this bean salad for a birthday party last night and it was a big hit. Everyone loved it. I would not change anything in this recipe because I think the amounts are right on. The only thing I did was to add black olives to the salad. It makes alot so it would be great for a big gathering. Will be making again.

Sauteed Portobellos and Spinach

I had some spinach and button mushrooms I needed to use up so I searched the site and found this recipe. My dh and I loved this side dish. The only changes I made was: used fresh spinach which I steamed prior to adding to the sauteed mushrooms. Did not have portobello mushrooms so used the button mushrooms. Did not have red wine opened so I used white wine and added a llittle extra grated Parmesan cheese. Will definitely make again. YUM......

Parmesan Baked Potatoes

Very easy and very tasty. I also added minced garlic to the butter, along with minced onion. I added seasoning salt and pepper. Next time I will add some spices, like chives or parsley for added flavor. Will make again.

Dinah's Baked Scallops

Loved this recipe. I may be slightly bias because I love scallops. After reading many of the reviews, I made the following changes: used Italian Panko bread crumbs, used minced fresh garlic adding to the butter to saute, only used 1/4 cup butter, that was plenty, 2 T. white wine and 1 1/2 T. lemon juice. I also broiled for a few minutes to brown the bread crumbs. Yummy.....

Spinach Phyllo Cups

Absolutely delightful! Made these for a birthday party last night and they were gone in no time. Everyone wanted the recipe. After reading reviews, I made the following changes: added more garlic, used Garlic/Feta Herb (6 oz pkg), added 1/2 cup grated Parmesan cheese to mixture, topped with finely diced Roma tomatoes (used 2) and topped with shredded Moz. cheese. Next time I will buy four boxes of the phyllo shells because three is not enough. Will be making this recipe in the near future.

Tomato Chicken Parmesan

This dish was awesome! My Dh loved it! I mixed seasoning salt, pepper and garlic powder in with the parmesan cheese and I used Italian Panko bread crumbs. Once I coated the chicken, I baked in the oven for 20 mins and then placed some sauce over the top and continued to cook for another 20 mins. I added the Monterey Jack cheese and left in the oven until the cheese melted. I served this with thin spaghetti and additionel pasta sauce on the side for the spaghetti. Will definitely make again. The chicken was sooo tasty and juicy....YUM!

Pesto-Stuffed Pork Chops with Caramelized Onions

This dish was fabulous! Very easy to make and is done in no time. The pork chops were so juicy. I used 4 boneless center cut and the only changes I made to the recipe were: I added some minced garlic while the onion was cooking and added sliced roma tomatoes on top. Added an additional 10 mins to cooking time and placed a slice of swiss cheese on top. Will definitely make again.

Fra Diavolo Sauce With Pasta

This dish was very testy, although I do wish the sauce was a little thicker. I think I will add some tomato sauce or paste next time. I did add some sauteed, chopped zucchini, reduced the red pepper to 1/4 t., used a pound of shrimp and a pound of bay scallops. Added a splash of white wine to the scallops when I sauteed them.

Meatloaf with Italian Sausage

This dish was verry tasty. It was a nice change from our usual favorite meatloaf I make. Was looking for a different taste and I was not dissappointed. I used a pound of bulk sweet Italian sausage, used Italian Panko Bread crumbs instead of the hot wheat cereal and added some garlic seasoning to the meat mixture. I spread Sweet Baby Ray's Vidalia Onion B/Q Sauce over the top before placing in the oven. Those are the only changes I made to the recipe. Will make again.

White Cheese Chicken Lasagna

YUMMO! This dish is awesome. What a nice change from the regular red sauce lasagna. I only made a few changes after reading other's reviews. I shredded the chicken, used fresh spinach, added sliced sauteed mushrooms and split the milk with lt. cream. My DH loved this dish and I will be adding to my rotation list. Cranberry Sauce Chicken II

I was very impressed with this recipe. The only change I made was to use Thousand Island Dressing. I thought it was sooo yummy. My husband didn't like it as much as I did, but he does not like chicken thighs. Next time I will use chicken breasts.

Taco Stuffed Shells

This dish was O.K. I didn't dislike it but I would not rate it at the top either. I did use a 24 oz jar of thick and chunky salsa and I am glad I did. I may make it again for an get together.
