Oh, there have been plenty. I'm not the best baker in the world. Far too much of a science for me to get it right every time. There have been plenty of batches of gross muffins that ended up in the garbage :)

Beef Barley Stew
I thought this was going to be better. It was really boring in terms of taste. I didn't follow the recipe exactly, since I added a few extra veggies I has in my fridge (2 red peppers, 3 potatoes, no mushrooms). And I didn't add any wine, as I didn't have any. The wine would have added nice depth, but I think it still would have been missing something. I cooked it 8 hours in my slow cooker and I found it just tastes like veggies and barley. Hardly any beef or any other flavor at all. I will eat the enormous pot-worth I made, but I probably won't make it again.

Green Eggs and Ham Quiche
I wasn't sure about this at first, but the taste only gets better as it sits! I had only a tiny bit of spinach, so I added some cooked chopped broccoli. I also added some garlic to the onions, which I cooked in a little butter, before mixing with the broccoli/spinach. I mixed the baking mix, milk and eggs separately and then stirred everything together, so as to get a more chunky texture. Added the ham and cheese on top of the 9 x 9 glass dish. I cooked it 35 mins @ 325 and an additional 15 mins @ 350 because it was totally jiggly!

Sally's Spinach Mashed Potatoes
Who would have thought that something with this much spinach could taste so good?!?! I used a whole package of spinach, even though it looked like a lot, 7 medium sized potatoes, 1/2 cup butter 1 small container of sour cream. 2 chopped green onions, 2 cloves garlic. I chose not to put any dill in it. I had no cheddar, so I put 4 Kraft singles on top, covered with some crumbled goat feta, and baked at 400 for about 30 minutes along with a huge fillet of salmon. Absolutely amazing and everyone loved it!
