Outrageous Chocolate Chip Cookies
This is the best cookie recipe I've tried in a long time. Perfect combo of chocolate chips, peanut butter and oatmeal. I made them exactly as written and couldn't be happier with the results. I used my Pampered Chef cookie scoop and ended up with exactly 2 dozen cookies. Will definitely be making these again! Spectacular!!!

Quick Tuna Casserole
This was super quick and easy. I loved the fact that I made the whole thing in one pot on the stove top. I made a few minor adjustments based on what I had on hand. I made the mac & cheese using only almond milk (I prefer it to regular milk); no butter or margarine. I also used a cup of frozen peas (cooked in micro first) and a 6 oz pouch of tuna. It was a tad on the salty side for me, which I expected, so I plan on using lower sodium soup next time. I didn't have any french fried onions, but I didn't miss them at all. It was soooo good!

Taco Casserole
This is a great recipe. I made a few alterations based on the reviews if others. I added 2 cloves minced garlic and a 1/2 tsp of red pepper flakes while browning the ground beef. It wasn't quite spicy enough for me, so I may up the amount of red pepper or even add some jalapeƱo next time. I also doubled the amount of cheese (I used colby jack) and only baked it for 15 minutes. It was great the first time around and even better as leftovers!
