Vietnamese Fresh Spring Rolls
This would have been much better had I cut out at least half of the cilantro, if not all. The cilantro was too overpowering in this dish. I found a satay peanut sauce recipe that was excellent with these. I would make again, minus the cilantro.

Double Layer Pumpkin Cheesecake
I make this recipe at least 5 times every fall, it is a must have! After pouring in the first layer of cheesecake mix, it helps to put it in the freezer for a couple minutes until the rest of the batter is done. That way they don't mix and you get a more defined double layer. I also use pre-mixed pumpkin pie spice instead of individual spices, and I usually sprinkle some cinnamon on top just for show.

Rockin' Oysters Rockefeller
I've never had oysters before so I was nervous to prepare them. After hearing horror stories about shucking oysters, I was pleasantly suprised how easy it was after boiling them. I omitted the mozarella & milk as others suggested, and also added crumbled turkey bacon. I think the cheese was a little overpowering, next time I might omit some of the Monterey Jack. Overall it was a hit.
