About this Cook
I'm a New England mother of three boys (twins 20, and a 14 year old who all eat like horses). They and their father keep me on my toes. I work for a local animal hospital and tend to collect animals like I do recipes!
My favorite things to cook
Good old fashioned "comfort foods". I also enjoy cooking for the holidays - Christmas cookies, candies, etc.
My favorite family cooking traditions
Thanksgiving dinner! I wear myself out every year baking pies, deserts... planning side dishes to go along with the turkey, etc.
My cooking triumphs
There have been so many little ones over the past 20+ years. The time I decorated a very detailed cake for a family member's 40th birthday party amidst a hot, humid August day. Recently, I made Chicken Cordon Bleu from a recipe here on site and it rivaled our favorite restaurant's version. That gave me perma-grin!
My cooking tragedies
Along with the successes, there have been some major flops! Some were so horrible, I must have erased them from my memory... but, I know I'm not the only one that left the gizzard/neck inside my first Thanksgiving turkey. Or, followed a recipe only to find that I was missing a key ingredient... Or, pulled meat from the oven to find that it was still raw. *sigh*

Cheesecake Bars
Definitely double this recipe if using an 8" pan! In order to fill a 9 x 13" pan and have plenty of the cheesecake filling, I quadrupled the filling ingredients and it still came out well. The only change I made while mixing such a large batch was to use only 2 eggs. Previous reviews mentioned that it would be too "egg-y" otherwise. The crust is a nice change from the usual graham cracker or cookie crumb crusts. Of course, the baking time for the filling was also much longer because of the greater amount. We topped it with cherry pie filling, but I would love to try this with mini-chocolate chips or a raspberry swirl. This recipe is one I'd make again when a cheesecake craving hits.

Creamy Chocolate Frosting
Simple & quick preparation using ingredients most everyone has on hand. Like others, I used regular milk instead of the evaporated and found the end result was definitely creamy & chocolately. Perfect brownie frosting!

Slow Cooker Tender and Yummy Round Steak
This is definitely tender! Like other reviewers, I tweaked it a bit to enhance the flavor. I added a packet of brown gravy mix and increased the water to total one cup. Also added sliced celery and liberally sprinkled a salt free all purpose seasoning that includes parsley, basil, red pepper & thyme over the meat before adding the liquid/soups.
