About this Cook
Cooking has really become a joy since I became a mother. Its so nice to cook for my family because they really enjoy it.
My favorite things to cook
I love to bake and its funny because I HATE measuring stuff, but as long as I follow the basics I have learned improvising and tweaking will come out nicely. I like making soups and stews, chilis and pastas. I also really like spanish food....just wish my husband did!

My mother always made the best stuffing for Thanksgiving and I make it every year!
My cooking triumphs
I don't think I was ever prouder than my first whole roasted Thanksgiving turkey....I was so afraid that I wouldnt turn out and Thanksgiving would be ruined, but it turned out great to my suprise.
My cooking tragedies
Most of my tragedies have been through use of a slow cooker...The idea of using one was so appealing...throw stuff in, dinners ready when you get home....how easy and fool proof can you get, right? Well, wrong. I dont know why things turn out so gross in a slow cooker sometimes, but they do...

Gourmet Sweet Potato Souffle
Absolute hit at Christmas last year....making today for Thanksgiving. The only thing I do different is substitute white sugar for light brown (its a little richer and not as sweet) and I omit cloves because I dont like the taste. Fantastic!

Roasted Garlic
I love roasted garlic but I do it a little different...I peel each garlic clove and then make a little "bowl" out of tin foil by putting the garlic in the middle and then wrapping the tin foil up and sinching at the top. I leave an opening and put a pad of butter right on top. I also bake at 350 for 30 mins....turns out perfect. I mash it...add a little salt and spread it on italian bread and top it off with a little romano or parmesan cheese!

Pasta Bake
I did like this recipe but I changed it so my rating isn't exactly the most relevant. I made it exactly like the recipe except I decided to make a mixture of ricotta, mozzerella, parsley and eggs to put in the middle. I put half of the pasta mix on the bottom, the cheese mix and then more pasta with mozzerella on top. I was trying to make an "easy" lasagna but I think it turned out a difficult pasta...lol. I think the real issue was that I bought a mozzerella because it was on sale (cabot) and not my usual (sargento)...Cabot has a little bit of a smoked flavor that I did not care for. Next time I will try it like this again and use sargento and rate again... All things aside, my husband ate two helpings and made a large container for work tomorrow.
