Pork and Green Chile Casserole

I was looking for a recipe to use up some left over pork roast and tried this. Since the pork was already cooked, I just sauted some chopped onion in a small amount of chicken broth and added the pork, black beans, tomatoes with green chili peppers in them, a can of corn, a can of cream of chicken, three Tb of salsa, and 1 Tb of cumin, no water since I didn't add the rice. My husband preferred it over rice so I cooked the rice separate. I heated it on the stove top and didn't put it in the oven. We both enjoyed it. I ate it with chips like a dip with shredded Mexi cheese and sour cream stirred in . Thanks for the suggestions from others. Will definitely make this again.

Easy Mini Quiche

Very good base recipe. I was voting on pictures and had to stop and make this. :-) I added a can of chopped clams (drained) and used Italian bread crumbs with melted butter pressed into bottom of muffin cups in place of bread. Didn't have any mustard so used a little lemon pepper. Too lazy to chop or grate onion so used dried onion flakes and some garlic powder. :-) Also cut recipe in half with 2 eggs, a splash of milk. Along with cheese and chopped cherry tomatoes. Sprinkled some cheese on top after removing from oven. Next time I will use bread and maybe some bacon. Thanks for a great lunch!

Triple Threat Fruit Smoothie

I had a pkg of frozen mixed berries ( raspberries, blueberries and blackberries) so used that with the banana, peach yogurt and orange juice. Also added about 1/3 cup Fiber One cereal. Delicious! It helps to use low-carb yogurt and reduced-sugar orange juice when you are diabetic like me. Update: I tried this with strawberries, banana, vanilla yogurt and oj. Just as delicious. When I get some kiwi and blueberries I will try as written.

Coffee Shop Fudge

I made this fudge over the holidays and loved it. I never knew you could toast nuts in the microwave, but they turned out great! I only used 2 cups choc. chips and added about 3/4 cup dried cranberries. Also a little less than a teaspoon of cinnamon. Even with the changes it was delicious. I loved the flavor of the cinnamon and the faint flavor of coffee. Course, I loved the taste of the cranberries as they are one of my favorites. It was so easy and I am all for that. Thanks, great recipe!

Cranberry Dip

Made this dip twice lately because I loved it so much. I made it the first time with sugar free apricot preserves and Splenda and the second time with sugar free orange marmalade and Splenda. I am diabetic and this enabled me to eat more as it was so delicious. :-) The dip with the orange marmalade reminded me of the cranberry relish my mom used to make when I was growing up. I know I will make this much more than I should. Will try lower fat cream cheese next time. Pouring the cranberry mixture over the cheese block worked perfectly for me. Just the right blend of flavors. I did let it sit overnight in the fridge and really agree that it helped blend the flavors.

Reuben Dip

Made this dip over the holidays and it was as advertised, delicious! Really reminded me of Ruben sandwiches I had in the past. I just couldn't quit eating it, ate way too much! It was really good with toasted rye bread. Next time I will try to make it with healthier low fat alternatives since I know I will eat too much!

World's Best Lasagna

The name is true in my book. I have made this twice and have loved it both times. I make it as stated except I use more meat and cheese and no salt. The flat oven ready noodles work great as well. I made it up last night and took it to my daughter's today to cook it for lunch. Every one loved it and she kept the left-overs. :-)

Corn Casserole III

Made this for Thanksgiving meal. So easy and so good! I listened to other reviewers and added one egg. Left out salt and pepper. There was plenty of salt from corn even though I used no salt added whole kernal corn. Better for those of us with hbp. It was perfect. I ate way too much! Definitely 5 stars!
