I am a vegetarian living with my two dogs. I work full-time as well as attend art school full-time, so my free time to cook is limited. I love to make food in large quantities and freeze it. This way I always have home-cooked, healthy food available and am not tempted by fattening fast food!
My favorite things to cook
Everything I cook is vegetarian. I like to experiment with pasta and rice especially. I have my old stand-bys, but am always open to a new dish.
My favorite family cooking traditions
Every holiday meal that I have ever had, has always had rice salad. It's a light mix of rice, vermicelli and vegetables. Being Mormon, we also have a dish we jokingly refer to as "funeral potatoes." It is a dish that is prepared at every funeral, as well as church get-togethers, wedding receptions, family functions, etc. It is an easy scalloped potato dish with a few kinds of cheese and onions.
My cooking triumphs
I thoroughly enjoy baking over cooking. I created a "frozen banana pie." A friend and I were discussing how good they are and hard to find. I came up with the idea of making a pie that would taste like our favorite treat. It was DELICIOUS!
My cooking tragedies
The first time I created a dish my mother had always made, was for my boyfriend. It was bread dumplings with egg noodles in a vegetable gravy. It turned out bland and much too thick! He was sweet and ate it anyway!
