Bean and Honey Burrito Casserole

Really good! I rarely make enchiladas because my young kids won't eat it. This was a nice twist that even my picky eaters loved. I served it with avocado slices and hot sauce for my husband & I. The only thing I did different was to double the sauce. When I mixed the sauce with the chicken/veggie mixture it just seemed dry. Luckily it's quick & easy to whip up more. I will definitely be making this again. Thanks!

Scalloped Potatoes and Onions

These were awesome! I made them for Christmas dinner and everyone in my family loved them. The sauce is fabulous! Just like the other reviewers have said the potatoes come out so creamy. I contemplated adding cheese (because everything's better with cheese, especially potatoes!). But I'm glad I didn't, they did not need it at all. In fact I think adding cheese in addition to the butter would have made them too oily. The only thing I did different from the recipe was once they were done I removed the foil and put them under the broiler for about 5 minutes to brown them. Best scalloped potatoes ever!

White Chocolate Macadamia Nut Cookies IV

Soooo yummy! Flavor & texture is great, slightly crisp on the outside and chewy on the inside. But I found the recipe to need a little tweeking. Like many others I doubled the recipe but kept the choc chip & nut amounts the same. The first batch I pulled out after 8 minutes because they were starting to brown, but they were still gooey in the center. So I lowered the temp to 350 and baked for 10 minutes...perfection!

Zesty Slow Cooker Chicken Barbecue

I wasn't so sure about this, I just didn't think it sounded like anything special. But I have to admit I was very pleasantly surprised. I followed the recipe exactly. Threw my chicken breasts in straight from the freezer and cooked it on high for exactly 4 hours. The chicken shredded beautifully and I served it on sandwich rolls. It would also be good served over rice or mashed potatoes. I definitely recommend using a savory or spicy bbq sauce, not sweet. Or if you do, just omit the brown sugar. This was perfect for a busy school night family dinner!

Ranch Dressing II

This is a great substitute for bottled ranch dressing, and it tastes better too! However if you want dressing, not dip, definitely replace the sour cream with milk or buttermilk. The only variation I made was I used celery salt in place of regular salt. Will definitely make again!

Zippy Summer Shrimp

This is a great basic recipe for shrimp with lots of flavor! I just want to make one recommendation, don't ever cook garlic on high heat! It burns fast & easily and doesn't become translucent like onion. It's best cooked on medium-low heat. Other than that I followed this recipe exactly!

Marinated Baked Pork Chops

This is very good. It's similar to my normal 'go-to' pork chop recipe. However that recipe calls for beer which I didn't have so I decided to try this. The sauce is awesome and goes great over rice or mashed potatoes. I used only 3 chops but still made the same amount of sauce and it was perfect. However I only baked my chops for 30 minutes total. They were bone-in and about 3/4 inch thick. They weren't the most tender, but they weren't tough either. I will definitely use this sauce recipe again but I will either do the chops in the slow cooker or sear them for a couple minutes on each side them simmer them on low in the sauce for about an hour or so. This always produces very tender chops!

Addictive Sweet Potato Burritos

I wasn't sure about this recipe but they were delicious! I used actual sweet potatoes, not yams, which is just my personal preference. The ingredients may sound strange, but it's a must try!

Whipped Cream Cream Cheese Frosting

This frosting has excellent flavor and I love that it's not too sweet. I made it a day ahead since i was going to be piping cupcakes and wanted it to be stiff. At first I was concerned because it seemed like it wasn't stiff enough, but it worked out just fine. If you want a really stiff frosting for piping though this may not be it. But everyone raved about how delicious it was. Thanks!

Baked Kale Chips

Yikes! Waaaaay too salty! Also I kept checking on them and they didn't look burnt or even brown really but when I took them out after 15 min, they were totally burnt. I'd like to try them again, but next time I will probably only bake them for 5-8 minutes and I will use only a pinch of kosher salt.

Drunk Chicken

I really wasn't expecting a lot but this chicken was very moist & tender, fantastic! I didn't have skewers so I just sat it on a foil lined baking pan and it was fine. Thanks for the great recipe!

Jicama Spinach Dip

This was very good! I liked the idea of using jicama instead of waterchestnuts, and the addition of the red bellpepper. It had great flavor & crunch. The only thing I changed was to add a second package of chopped spinach. With only 1 pkg it is VERY light on the spinach and in my opinion 2 was just right :) I will definitely make this again!

Vinegar Cookies

These are excellent! They were so fast to make, and with only a few pantry staples. I almost added eggs cause I've never made cookies without them and was hesitant about how they would turn out, but I'm glad I didn't! I only added a pinch of cinnamon & vanilla for extra flavor. The texture of the cookies was light & crispy and a little chewy. My only complaint was there weren't enough of them :)

Princess Cookies

These are fantastic lemon cookies! I followed the recipe exactly. I was a little nervous after reading the reviews that I would end up with spongey or cakey cookies, but they were perfect...light and slightly chewy. I definitely recommend drizzling the cookies with the glaze that the recipe poster suggests in the first review.

Ratatouille Bake

Very good! I love the use of fresh basic ingredients. And it's quick & easy to throw together on a weeknight, what more could you want! I used fresh ravioli and just put it straight into the dish (it cooked fully during baking). Also the store was out of eggplant (I know, weird) so I used extra zuchini and added mushrooms. I think you can use whatever veggies you like. Will make again!

Best Big, Fat, Chewy Chocolate Chip Cookie

mmmmmm, awesome cookies!! I made them a little smaller than recommended (just average size). Also I used softened, not melted, butter. 14 minutes was the magic cooking time for me. They were the perfect shape, not flat or too puffy. They came out crisp, chewy & delicioius!

Big Soft Ginger Cookies

One of my all time favorite cookie recipes is Cinnamon Cookies ll from this site. But I thought I would try something different. Unfortunately I did not care for these cookies. I love cookies that are a little crisp on the outside and chewy on the inside. These cookies came out very fluffy & cakey, and a bit dry. I followed the recipe exactly so I'm not sure why they were dry. The flavor was good, just not at all the consistency I like.

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

Fantastic!!! Such a delicious combination of flavors. And the dressing is outstanding!!! Even my husband who's not a big salad guy raved about it. I used center cut bonless pork chops, seasoned with salt, pepper & garlic powder and pan fried them for about 5-6 minutes per side until just done. If you have left over pork of any kind even better! You could substitute chicken, but the pork really pairs well with the fruits. Add your favorite loaf of bread and it's a perfect summer dinner.
