Cream of Wheat Griddlecakes

I've tried several different pancake recipes and I think these are my favorite. They're rich & delicious but still light, and the cream of wheat adds a great flavor & crisp texture. Other than adding blueberries I followed the recipe exactly.

Chicken Soup

This is such a fast, easy way to enjoy homemade chicken soup! This recipe makes a great base as you can add anything you like. It's great with some some egg noodles, garlic & onion powder and any fresh chopped herbs you have on hand (my favorites are parsley & dill).

Truck-Stop Buttermilk Pancakes

Awesome pancakes! I was expecting them to be kind of dense like diner pancakes, but they were light & delicious. And they had such a fantastic flavor! I made them for a large family breakfast and everyone was raving about them. On a side note, this recipe makes a TON! I had enough pancakes for 4 adults and 3 kids (and some of us pigged out!), and I still had about 12 or so pancakes left over to freeze for quick weekday breakfasts. I will definitely be making them again!

Hasty Chocolate Pudding

I had no idea homemade chocolate pudding could be so quick & easy, and I had all the ingredients on hand! The texture was just perfect, so smooth & creamy. Mine took 6 minutes to thicken in my micro. The only mistake I made was to add more cocoa that the recipe called for (a little less than 1/2 cup), and my husband & I both thought it was a little too overpowering. Next time I will use exactly the amount the recipe says. Will definitely make again!

Simple Kale Soup

I really enjoyed this soup! So simple to throw together, and just a few ingredients. But the resulting flavor is so wonderful. My whole family enjoyed it and I will definitely make it again!

Baked Dijon Salmon

I tried this recipe based on my aunt's recommendation (who is an excellent cook). I really love this dish. All the flavors compliment eachother really well. The second time I made it I left out the pecans and I actually liked it a little better. Definitely squeeze some lemon on the fish when you serve it!

Salmon and Swiss Chard Quiche

Okay so I realize I probably shouldn't be rating this recipe because I changed it so much. But the main thing I was curious about was how salmon was going to taste in a quiche, and I was pleasantly suprised. Other than that I basically turned this into a "standard" quiche. I used a pie crust, spinach instead of chard, added red bell pepper, an extra egg and some shredded cheese. I had to bake it for about 45-50 min. My whole family loved it.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

As is I give this 4 stars only because I think it's slightly bland on it's own. However I think this recipe is a great "base" and is very versatile, in addition to being very quick & easy. I used canned diced tomatoes with green chilies for some kick. I also used fresh garlic, onion powder since I had no scallions and added a few squeezes of lemon juice. My whole family really enjoyed this meal and I will definitely make it again!

Chicken Pot Pie IX

Based on the rating of this recipe I was expecting chicken pot pie perfection. It was quite good, however I found it to be lacking slightly in the flavor department. I added a little extra S & P and some garlic powder. I also used half & half instead of milk. I also used puff pastry instead of pie crust, which was good, however if I do that again I'll only use it on the top as the bottom layer remained soggy. All in all a pretty good recipe, but I'm still searching for the perfect chicken pot pie.

Flavorful Flounder

Mmmmmmm, wow, this is so good! I didn't have green onion so I used onion powder instead and also added some seasoned garlic powder. The fish is so mild and the combination of flavors from the sauce is fabulous. Even my picky children liked it. I will definitely make it again!

Spinach and Orzo Salad

This salad is absolute perfection! I made it for an extended family bbq, and everyone couldn't stop raving about it. My mom & I ate the leftovers for breakfast! I made the recipe again two days later because I couldn't stop thinking about it. And it's delicious with any type of vinegar. If you like mediterranean flavors you will love this salad!

French Dip Sandwiches

I realized after making this that I forgot the soy sauce!! No wonder I thought it needed salt! :) But the flavor was still really good. The meat was very tender (I cooked it on low for 7 hours). My only complaint was the sauce had about an inch layer of fat on top. I tried to skim as much as I could, but there was still a lot. And my roast didn't seem to have a lot of fat on it. I guess I need to get a sieve or something for things like this. But overall the recipe was good, look forward to trying it with the soy sauce :)

Cheesy Creamed Spinach

I love this recipe because it's so simple, versatile and tasty! I've tried it with different kinds of cheeses, used garlic powder instead of fresh when I was out, and also frozen chopped spinach. It always comes out great.

Shrimp Fettucine Alfredo

This was fantastic, I'll never buy jarred alfredo sauce again! I added a little chicken broth and a squeeze of lemon juice to give it a little zip. My whole family gobbled it up. This is a definite keeper!

Pork Fried Rice

This by itself was just okay. I made the recipe as is, only using bacon fat instead of butter. In the end I found the dish to be really bland so I added some extra of all the spices & soy sauce, in addition to about a tsp of sugar. After that I thought it was a solid 4 stars.

Best Chocolate Chip Cookies

I don't know that I would necessarily call these the "best" chocolate chip cookies I've ever had, but they were definitely very good. They had good flavor. They were crispy on the outside and soft on the inside, but not as chewy as I'd like. Also they weren't cakey ( I hate cakey cookies). And they weren't flat. The only thing I did different was to omit the nuts as I didn't have any. Also the magic baking time for me was 13 minutes, after 10 minutes they were still raw in the middle. I will definitely make these again, thanks!

French Toast Bake

I was very pleased with this recipe. It wasn't too sweet, and the texture & flavor were perfect. My bread wasn't stale so I toasted it first (this will help to keep it from getting soggy if it's not stale). It was a very easy dish to prepare and it turned out so beautiful, great for serving to company! Next time I think I'll add some peaches, and I think any kind of pie fruit would be great on this (apples, cherries, etc.). Thanks!

Greek Chicken Pasta

I hesitated to make this because I wasn't sure if it would be "flavorful" enough...boy was I wrong! This is a perfect example of a really satisfying delicious meal that's also light & healthy. The only thing I did different was to use a 14oz can of diced tomatoes instead. The flavor combinations in this dish are fabulous and I will definitely make this again!

Creamy Chicken and Wild Rice Soup

This was my first time making Chicken & Wild Rice soup and I really like this recipe. It was very easy to make and very yummy. I decreased the flour to 1/2 cup. The only other thing I changed, and I wish I hadn't, was I used whole milk. Next time I will definitely use cream or half & half as it was lacking any richness and would have been much better I think with the cream.
