About this Cook
For the last few years my husband and I have been moving around the country for his job, he puts up power lines. We have two great dogs, but no children yet! That means I can make my food as spicy as we want! And since he works all the time I don't need to work right now, so I get to experiment with food all day!
My favorite things to cook
Mexican food! And if it isn't Mexican, i will give it a spicy Southern flair for sure!
My favorite family cooking traditions
My mom always forgets the mashed potatoes at Thanksgiving! lol I want to start having more traditions when I settle down at home, but I have been on the road for too long to be involved in anything.
My cooking triumphs
I love putting together parties where everyone is pleased. I try to incorporate a little of everything so everyone has a good time, and I always get compliments on that!
My cooking tragedies
Putting the wrong kind of rice in a slow cooker. The dish had so much wonderful flavor, but we couldn't eat very much because of the texture. It turned out to so gooey!

Black Bean Vegetable Soup
VERY good black bean soup!!! Here are my suggestions after trying a few times: Add 2-3 chopped celery stalks with the onion and garlic, add extra garlic, puree carrots with the black bean/tomato puree (if you don't like cooked carrots), add a couple beef bouillion cubes (I used vegetable broth but added the cubes for extra flavor, if this dish doesn't HAVE to be vegetarian),I also used the can of corn with peppers in it, AND add some tabasco sauce if you want some kick! I served with shredded mozz cheese and mini mexican cornbread muffins I made... DELICIOUS!!!

Marshmallow Chocolate Chip Pie
Everyone loved it! I used chocolate chips to grate them in the mixture, and got tired of grating after a while so I put a handful on top with the cracker crumbs which looked pretty. It would be good with chocolate syrup drizzled on top too.

Kielbasa Stew
Very good, loved the sweet tomato taste. I browned the kielbasa first, then threw everything in the crockpot. I added potatoes and a can of fire roasted tomatoes too (makes everything taste better!) Omitted the salt from reviews and let my family add salt as they pleased to their own bowl. Needs a couple more cups of cabbage, I didn't know I would like cabbage so much but this dish made me want more and more cabbage so 3 cups didn't last as long as the rest of the stew. I used some other seasonings too, just whatever feels right. I didn't stir the sour cream in, just put garnished bowls with it. Or shredded cheese. Serve with garlic bread!! Yummy!
