Gale Gand's Deep Chocolate Shortbread

Delicious! Super crumbly, fine texture and not overly sweet. You can even add finely chopped pecans or macadamia nuts to the top. This would also be delicious dipped in some melted white or milk chocolate. I'll be making these in double batches because they go fast.

Apple Scones

Pretty bland. Cakey. Not scone type. It was salvagable with some fruit marmalade. Won't be making this again.

Apple Crumble Pie

Super easy! Wow. This has replaced my mother's recipe. I made a double batch and baked two pies at once. 400f seemed to hot and the crust was browning to quickly. I lowered it to 350f until it was bubbly, around 45-50 minutes. Btw, my mom was ever so slightly offended that I won't be baking her recipe ever again. ;)

Eggless Crepes

I ran out of eggs and this was the first eggless recipe that I found. It's simple but be careful when you mix the melted butter since it will solidify. Next time I'll just use oil to avoid this. I found it to be too greasy. You really don't even need to oil the pan. Taste and texture were ok. I'll keep the recipe just for days like today when I don't have eggs.

Best Brownies

I've been doing these brownies for the past year. I no longer use any other brownie recipe and I won't even buy store bought mixes. The changes I make is I divide the sugar in half (half refined/half sugar in the raw) and I add about 1/2 cup macadamia nuts (if/when available). Also I don't like brownies with frosting, so I skip that last step. Still..these do NOT last more than a couple of days and everybody loves them.

Crunchy Oven Fried Tilapia

This is an ok recipe, I've had better baked fish dishes. The bread crumbs and corn meal make a harder crust type shell over the fish, I must say the fish was very moist, but not enough flavor on the fish itself. It is not a keeper.

Mandarin Orange Cheesecake Pie

This is DELICIOUS.. I used pineapple concentrate instead, and it goes wonderful with the mandarins. This is certainly a keeper and will make very often.

Baked Salmon II

So good.. definetly a keeper.. husband liked it too.. eventhough he is a red meat eater.. will do again.. but with less salt. I used fresh basil instead.

Ultimate Double Chocolate Cookies

This cookie is exactly what I want in a chocolate cookie... moist inside and set outside. I just did half batch. And still got enough good sized cookies.. next time I will make them just a bit smaller, because the do satisfy with a glass of milk. DEFINETLY a keeper.. OH.. I might even add pecans or walnuts... yummmm... Thanks for the recipe

Eggplant Parmesan II

I only made 2 small eggplants (different variety I can't remember the name, which tastes sweeter than the large one) I cut both in half and I only did one layer. Both the egg and bread crumbs (out of saltines and blended) were seasoned with All Purpose Seasoning (herbs and salt) It was very good and tasty.

All American Apple Pie

I like the crust and topping, but when it came to the filling it was just way too much sugar, the pie came out super mega sweet and watery, the flavor is ok, but not great due to excesive sweetness, I guess next time I will only use half the sugar, and less oil in the crust. No need to oil and flour the pan. I love the way the crust and topping are made, I would think it's easy enough for a kid to do it.

Cream Cheese Sugar Cookies

This was a very light cookie, easy to prepare and fast to bake. I prefered to undercook it a bit to maintain the chewyness. Next time I would add chopped almonds, pecans or macadamia nuts. Just wonderful.
