Mexican Ghoulash
Very good, almost a one-pot complete meal. Kid-friendly, too. I made this with gluten-free pasta. I used a prepackaged shredded Mexican cheese blend instead of the Velveeta, and threw in some diced seasoned canned tomatoes with the salsa just because I had some left over in the fridge. Next time I think I'll add some sliced black olives.

Cheese Sauce
A problematic recipe. Didn't come together well. Needs a lot more cheese, at least a cup more, if that amount of milk is going to be used. Also, I think the procedure is a little backwards; it would probably work better if the milk and cornstarch were heated together first to make a kind of white sauce, and then the cheese were added.

Easy Beef and Rice
This came out so-so. The liquid boiled over the sides of the dish in the microwave and made a mess, even though the lid was on. And the end result was still soupy -- we had to eat it out of bowls with a spoon. If I make this again, I will only use one can of soup and perhaps less water as well, or a little more rice.
