Basic Chicken Salad

This was sooo good. I added a sprinkle of dried basil which added a lot of flavor. So simple for a quick lunch!

Italian Sausage Soup with Tortellini

Made this last night and everyone loved it. Followed the recipe except for using canned diced tomatoes and omitting the carrots. Using the fresh herbs is worth the extra time. I'm already looking forward to eating the leftovers for lunch!

Cream Cheese Cookies IV

I was very skeptical at first but these turned out awesome! I was all out of vanilla extract so I put in about 2tsp of black raspberry schnapps which gave it a slight raspberry overtone. They were sooo good.

Unbelievable Chicken

I LOVED this chicken! I was out of minced garlic so I used garlic powder. I didn't have any coarse-ground mustard so I just used regular yellow mustard. I also used the bottled lemon and lime juice. Basically I just subbed for what I had on hand. It still turned out fantastic. Next time I will make it exactly to the recipe.

Sesame Parmesan Zucchini

This is by far the best zucchini I've ever had. It was the perfect blend of spices. I did use less olive oil and cut my zucchini into 1/4" slices. Then I baked for 10 minutes instead of 20. They came out crispy on the outside and soft on the inside. So so good...

Hawaiian Chicken Kabobs

We eat this once a week in the summer. I LOVE IT! Here are the changes I make. I substitute rice vinegar for the sherry to make the chicken really tender. I double the marinade and put half with the chicken and half with the pineapple. Then when my husband grills them, he'll baste the kabobs with the leftover pineapple marinade. So so good...

Pie Crust IV

The proportions on this recipe are PERFECT! I used whole wheat flour for health reasons and the texture of the crust was still perfect. We put it under a quiche. If you do use whole wheat flour, I would recommend adding a bit of sugar, even for savory pies. Otherwise the wheat flavor can be a bit overpowering.

Salsa Sausage Quiche

This was quite good but I think the proportions are a bit off. We used 4 eggs and it still wasn't enough. Next time I'll use 5 or 6. The only other change I made was to use veggie sausage instead of pork. Overall, it's a good recipe, it just needs to be tweaked a bit.

Shrimp Scampi Bake

This was sooo good! I followed the recipe exactly and served with garlic bread and a caesar salad. I did use minced garlic instead of chopped because that's what I had on hand, but I think I would add a little more next time. The mustard adds a bit of a tang that makes this different from regular shrimp scampi.

I had never had bananas foster before but I cannot imagine any restaurant version tasting better than this! Just made this for a dessert for our anniversary dinner and it was to die for!

Chicken Cordon Bleu II

All I can say is WOW. This is delicious! The sauce really makes it. I followed the directions to a T but next time I think I'll use bread crumbs instead of the flour to crisp it up a bit.

Garlic Cheddar Chicken

The whole family loved this recipe. The only thing I did differently was to broil the chicken for the last 3 minutes of the cooking time which helped to crisp up the topping on top. I also lined the pan with some bread crumbs to soak up some of the grease.

Salsa Chicken Burrito Filling

I made this in the crockpot by putting 3 frozen chicken breasts in and pouring the rest of the ingredients on top. Then I cooked it for 3.5 hours on low, shredded the chicken, and let it cook on low for another hour. Turned out perfect.

Cinnamon Sweet Potato Slices

These made great snacks. The only thing I did differently was slice them very thin like chips. I also think next time, I will use spray butter on them to keep them from getting soggy.
