Asparagus Avocado Medley

We didn't have zucchini on hand, so we went without, and this was still a great salad. We used the leftovers to make omelets the next morning, and they were fantastic! Thanks!!!

Made exactly as listed, but marinated for about 3 hours first. These were amazing, and everyone at the Halloween party loved them. I agree with others that the flavor isn't intense, but it's addictive!

Yummy Sweet Potato Casserole

I've never in my life eaten sweet potato casserole. It always looks and smells weird to me. This recipe, though, was great. It was easy, and it looked fantastic. So much so that I actually ATE some and really enjoyed it.

Cranberry Sauce with Raspberry Vinegar

This was easy to make, and wowed the guests at Thanskgiving dinner. Most of them were used to gelatinous cranberry "sauce" from a can, so this was a refreshing change for them. Even the kids, who usually avoid cranberry sauce like the plague, ate this one up. Not too tart, not too sweet. Just right.

Chicken Breasts Pierre

I wasn't sure of this recipe when I read the ingredients. I thought it would taste weird... But it turned out amazing. My husband and I actually had a little argument over who would get the leftovers! I followed the recipe exactly, and was really impressed with the way the flavors worked together. I served it over sticky rice.

Garlic Lover's Pizza Crust for the Bread Machine

With only 2 cups of flour, the dough was pretty sticky. I worked in another 1/3 cup after removing it from the bread machine the first time I made it, and it turned out great. The 2nd (and other!) times I've made it, I add the 1/3 cup of flour to the bread machine pan. Good crust, works really well for pizza - tasty and not too tough or too doughy.

No-Cream Pasta Primavera

I followed the recipe exactly, and the pasta was pretty good. I would probably cut down on the olive oil next time, since it was a little greasy. The aroma of the roasted vegetables was great, though!

Chicken Breasts with Balsamic Vinegar and Garlic

This was good, but when I made it exactly as the recipe said, the chicken did turn out a little slimy (for lack of a better word) when it was done. Next time, I'll make it without the flour. The flavor was really good, and my one non-picky-eater child enjoyed it, but the other three wouldn't touch it, because they didn't like how it looked! :)

Best Bread Machine Bread

this bread turned out great. I followed the directions exactly, and was very happy with the results. It was also easy enough for me to allow my 5-year-old to do much of the "work," and now she's addicted to making bread. Thanks for the recipe!

Apple Cider Sauce and Pork Loin Chops

This was phenomenal. Like many others, I didn't have access to frozen apple cider, so I added a dash of nutmeg and cinnamon. All four of my kids (most of whom are picky eaters) gobbled this up. They even asked if we had leftovers so that they could have it again.

Elegant Orzo with Wilted Spinach and Pine Nuts

My husband and I loved this. We didn't make any changes to the recipe, and it was fantastic. I will warn you that my kids didn't like it at all, though. Too bad for them - this is a keeper!

Simple Turkey Chili

This was a very easy recipe, but came out a little bland. I followed the recipe exactly, so next time I will add some extra spices to add some zing. I served it over Fritos with a little sharp cheddar on top. Thanks for the easy recipe!

Easy Tilapia with Wine and Tomatoes

This is a great weeknight dinner. We followed the directions exactly (except we used dried basil from last year's garden because our basil hasn't come up yet). The fish was perfectly cooked with 15 minutes on the grill, and the sauce was very tasty. We served it over brown rice, but pasta would have worked well, too. This is a definite keeper. Thanks for the recipe!!

Sangria! Sangria!

We made three batches of this sangria for our Memorial Day party, and it was the favorite drink. The only change we made was to use diet Sprite instead of carbonated water. Otherwise, everything was the same - to the measurement in the recipe. This is a perfect summer drink!

Ham and Cheesy Potatoes

Very easy to make. I had to feed 6 kids with this (and they're all picky), and they actually ate it. I did not include the lemon pepper because I don't like it. It was creamy, tasty, and a great use of leftovers.

This was a great, easy recipe for the kids. They all enjoyed it, as did my husband and I. I didn't have egg substitute, so I used two eggs, beaten, instead. It was fantastic.

Pork Chops in Beer

I really liked this recipe - the chops were moist and flavorful. My husband, on the other hand, felt that the sauce was too sweet and tasted too much of beer. I used Sam Adams Winter Lager. If I had used a light beer, I think he may have liked the taste a bit better. All in all, this is a great weeknight recipe.

Roasted Pork Loin

I used a 3 pound pork loin and followed the recipe *almost* exactly (I always hate when people say they followed the recipe exactly and then proceed to tell you that they left out the chicken in the chicken parmesan!). I covered the roast for most of the cooking time (1 hour 45 minutes) and then raised the temperature on the oven to 425 and cooked it for another 15 minutes without the covering. I have a convection oven, which I always use when roasting meats. In the end, this was really wonderful. It is EASY, and the flavor made it seem like it took forever to prepare. Thanks so much for the recipe.
