Classic Peanut Butter Cookies
I read the advice others offered about adding 1/2c. flour and peanut butter in addition to the given amounts and the cookies turned out perfect! I used creamy peanut butter and added whole lightly salted peanuts as well as chocolate chip cookies (not like they weren't perfect already, but why not?).

Grilled Eggplant, Tomato and Goat Cheese
Excellent! I did not have goat cheese, so I used Havarti and it was great! My husband loved it and I will make again.

Sopapilla Cheesecake
I made this dessert for our mexican food themed Christmas and it was amazing! My family devoured it and could not stop talking about how delicious it was. Will make again!
