Garlic Chicken Fried Chicken

Quick easy and delicious! Especially if you have a fryer. I use Italian bread crumbs and would add a little more salt to the batter. I also use thin cut chicken breasts - i get nervous about thicker pieces cooking all the way through before the batter becomes too well done. Great recipe!

Veronica's Apple Pancakes

loved this! But, I added quite a bit more milk - until it got to a looser consistency. Using the milk suggested made the batter just splat into the pan...not spread like I was taught pancakes should.

Blueberry Scones

i had a hard time cutting this, so I made them drop style like others have suggested. For me this made 10 good sized scones, not 12. I also made this in my Kitchenaid mixer, which really made it a snap. keeper for me!

Spiced Sweet Roasted Red Pepper Hummus

I thought this was great (although while it was mixing a Persian friend said it smelled like chili dogs, which I dont think was a compliment). I put the garbanzo beans in my Kitchenaid mixer on speed 2 until they started to break apart, and then i cranked it up and dumped all of the other ingredients in. I didn't have fresh parsley, so I used dry; I didn't bother to measure the lemon juice, just squeezed two juicy lemons in - turned out fine. This is a keeper for me!

Whipped Cream Cheese

this totally works! I also put it in my Kitchenaid mixer with the wire whip - I also added a tablespoon of jam and a couple tablespoons of sugar to make a sweet variety. Love it!

Heavenly White Cake

baked per recipe except added half the almond called for as peppermint instead. made the cake sort of taste "fresh" but not too minty (which I liked). otherwise liked the cake but it was pretty crumbly - would have liked somethign that broke off more cleanly while eating as a cupcake - this mix yielded lots of crumbs.

Creamy Frosting

very creamy - but frosted beautifully! followed tip about waiting until milk is really thick and then cooling it before mixing in - sped up the cooling process by setting the thick milk in a bowl and then putting that bowl in a larger bowl of ice water.

Homesteader Cornbread

Made just as instructed - excellent! Maintained structural integrity for buttering - which is good, I hate a too crumbly cornbread. Was sweet, but no too sweet. Paired with Terrific Turkey Chili - great dinner!

Roasted Vegetables

This smelled delicious, tasted above average but not awesome. I think to get the taste to match the amazing smell I need to double the sauce (vinegar,oil,herbs). Trader Joe's makes a roasted balsamic vinegar veggie mix sold in their frozen aisle that smells almost identical to how this recipe smelled - I just wish this tasted as flavorful as TJ's mix. It's almost there though, I am going to try this again next week just upping the sauce and I'll report back.

Amazing Sun-Dried Tomato Cream Sauce

This sauce was just ok. I sliced some baked chicken breasts and added to the sauce and pasta to make it more hearty. I served with tortellini - it wasn't bad for an ordinary dinner but not amazing/on par for a dinner with company. If I make this again I'll add some pesto to balance out the sun dried tomatoes, again add chicken and maybe serve it with a fettuccine or something. I'll update if that improves the dish.

Easy Meatloaf

My first meatloaf - I don't think it stole the hearts of anyone in the fam, but it was really a decent change to the dinner line up that I'll probably cook again. Made similar changes other mentioned - lined pan with foil, added some W Sauce to the mix, sauteed onion in butter with some bell pepper before mixing, doubled the sauce mixture for the top, used turkey instead of beef.

Too Much Chocolate Cake

Quite good and obviously easy to make. Very fluffy. I would omit the chocolate chips next time though, I just felt like they added nothing, maybe its just a diminishing returns type thing. Baked in 2 9-in pans for 40 minutes. Looking forward to using other peoples variations of different cake box flavors/pudding flavor combos.

Very good recipe, nice way to integrate some less common ingredients into the weekly menu. We topped with parmesean cheese. Could have used a little more sauce, next time I'll increase the cheese and milk to get more sauce going.

Fluffy Biscuits

I really like this recipe for biscuits and gravy, but my husband says the flavor is just to "eh" to eat plain with jelly or something. So I guess whether to use this recipe depends on how your serving it - for use in a biscuit breakfast sandwich or covered in sausage gravy, these biscuits are great to me. I also appreciate that they are easy to make and rise up nicely. Following this recipe, I use a red wine glass to cut the biscuits and try to get no more than 10 biscuits out of the batch to make sure they are thick enough to achieve a nice height. I also brush the tops with melted butter before popping them in the oven.

Crustless Spinach Quiche

this is an awesome dish - i doubled it the mix and spread it into 2 9in pie pans to serve at a brunch this morning. Followed the recipe exactly, and everyone really liked it. I might try to add some chopped ham next time though, with a little meat mixed in it would be a great one dish breakfast with maybe some juice and toast.

Mom's Shepherd's Pie

great base - as I got comfortable with it I started realizing that I could toss whatever frozen veggies I've got in the mix. Once I even just served the mix over mashed potatoes because we were to hungry to wait for the baking process - not fancy, but hearty and tasty.
