Peppernotter (Scandinavian Christmas Cookies)

These turned out delicious! I love the spiciness as they go really well with tea and coffee. The only difference I'm gonna try next time is putting some jam in the middle. Like strawberry or black berry.

Slow Cooker Pineapple Pork Roast

Everyone enjoyed this recipe, even the ones who don't fancy pork! I served it with rice, a green bean casserole, and salad. Here's what I did: I chopped up 1 large onion and 2 cloves of garlic and made that the bed for the pork to lay on. Then I covered the 3 lb pork roast with thyme, rosemary, pepper, and a pinch each of cinnamon and cayenne pepper on both sides. Next came the cranberry and pineapple sauce mix (mashed). And last I topped it with about 1/2 cup terriyaki sauce. The terriyaki was crucial in balancing the flavors. I baked covered at 350 for 1 1/2 hours and let cool for 15 minutes before slicing.

Southern Candied Sweet Potatoes

Delicious all the way through! I substituted brown sugar for white and added a few splashes of spiced rum to deepen the flavors. Very easy to make.

Farmer's Market Vegetarian Quesadillas

Amazing and quick! I first sauteed onions and garlic. Then added the squash, zucchini, red and green bell pepper, mushrooms, corn, and black beans. To spice it up a bit I added sea salt, ground pepper, chili powder, cumin, and oregano to the mix as it all cooked. I used Mexican blend of cheese from Safeway market. Wonderful!

Sweet Potato Enchiladas

Awesome stuff right here. I switched up a few things from the original like using yams instead of sweet potatoes because they have more nutritional value, tripling the spices, caramelizing a yellow onion instead of green with about 3 cloves of garlic before putting it into the mix. I just put the corn tortillas in the preheated oven for about 2 minutes to get them flexible enough to roll. I topped both kinds – I made red and green – with olives and bell peppers. I also added a chopped up jalapeno to the middle stuff. I think next time I'll add sausage if none of my veg friends are over.

Zucchini Parmesan

This is a great recipe with lots of possibilities! I made a few changes for myself: (1) baked some potatoes prior to mixing with everything so that I wouldn't have to cook the whole thing longer and risk burning or drying anything out (2) Sauteed the garlic and onion with zucchini, yellow squash, mushrooms, bell peppers, jalapenos, and sausage (3) Layered that with the potatoes, sweet potatoes, carrots, celery, rosemary, thyme, oregano, basil, cheeses, spaghetti sauce, and red wine. Next time I'm going to try this with different meats because every type I thought of was going to be a fantastic addition to this recipe.

Japanese Zucchini and Onions

This is a great recipe with lots of possibilities! I made a few changes for myself: (1) Added garlic with the onions (2) Used sesame seed oil instead (3) Used very little teriyaki (4) Used a potato peeler for the zucchini and yellow squash so they would absorb more of the flavor (5) Added mushrooms and (6) I added a dollop of butter and a squeeze of lemon at the end before serving over rice with salmon.

Blueberry Zucchini Bread

Amazing! I used 1/2 the oil and substituted the other 1/2 with applesauce. I cut the amount of sugar to just 2 cups and substituted 1/2 of it with brown sugar. Also substituted 1/2 of the white flour with all-wheat flour. I added 1 teaspoon of nutmeg and a bit more blueberries than the original recipe called for. My girlfriend made her own batch of this with gluten-free biscuit and baking mix and WOW! Just as good, if not better.

Fruit Salsa with Cinnamon Tortilla Chips

I made this as directed and added pear, pineapple, and blueberries. I doubled this recipe for a party and there still wasn't enough chips (that I baked instead of fried)! I used the remainder of my fruit salsa for smoothies and topping ice cream. I can imagine this recipe being amazing with a myriad of other fruity combinations too. I will definitely experiment some more next time. Mmm...

Zucchini and Eggs

Wonderful combination of tastes in the morning! I sauteed garlic and onion with the oil first and then added the zucchini. While those were cookin, I cut up some jalapenos and bell pepper. After adding those in and letting them soften up, I poured in the egg mixture which included salt, pepper, soy milk, Parmesan, rosemary, oregano, and basil. I served it with toast and salsa on the side. Delish!

Avocado Tacos

This recipe served as a great starting point for my girlfriend and I to elaborate on. We added shrimp that we cooked with garlic, butter, red onion, chili powder and lemon. Then, for the pico de gallo, we used tomatoes, jalapeno, red onion, cilantro, lemon, garlic salt and pepper. And last, we warmed up a can of black beans and put corn tortillas in the toaster oven. Splashes of Tapatio filled in a very nice part of the palate. Cheese was a great topper as well.

Chocolate Rum Cake

This recipe made me and my girl wanna eat the whole thing right after pouring the glaze on, but we also wanted to try it tomorrow after it's soaked up all the glazy goodness. The recipe as is would be amazing for sure, but our taste buds made a few interesting suggestions that eventually led us to using Sailor Jerry's Spiced Rum instead of that white stuff, 5.9 oz chocolate pudding mix, dark chocolate cake mix, and adding 1/2 cup milk chocolate chips, 1/2 cup walnuts on the bottom and 1/2 cup in the mix, and yummy rich brown sugar instead of again... that white stuff.

Kielbasa with Peppers and Potatoes

This meal was great with a few additions! I cooked the red and yellow bell peppers (1 each), carrots (2), celery (2), and half of a yellow onion in a little bit of oil. In the other pan, I cooked up the potatoes with rosemary and garlic in a little bit of oil and butter. I threw in some corn with the kielbasa (16 ounce) once the potatoes got goin. When the potatoes were nearly to the soft point I added in the vegetables and a little bit of soy sauce before closing the lid to let everything mingle and finish cooking. My girlfriend and I liked it so much that we thought of doin other stuff with the those ingredients and a few others! We tried putting some sour cream and bacon on top and it was AMAZING!!! Could also be premium in a breakfast burrito! Which would be sweet in the case of there being leftovers for the morning, like when you've had a long night or something. That is, if there are any leftovers.

Hot Fudge Ice Cream Bar Dessert

It was very satisfying, yet I thought of ways I liked it better and tried it with success! I put the chocolate sauce on the bars first and then after chilling in the freezer, I added slices of banana followed by whipped cream, walnuts, and caramel sauce. Super yummy

Brazilian Black Bean Stew

Besides adding extra chorizo and cilantro and substituting the sweet potato with yam, we followed the recipe as is, and it turned out to be super yummy. It was amazing with butter garlic sourdough bread! It's like nothing I've ever tried before!

Salsa Chicken

It was really good, but we added 1 tbsp of butter, and 1 roma tomato, 1/4 yellow onion, 1/2 lemon, and 1/2 jalapeño as the "fresh" salsa that got added to the canned salsa. We also added avocado as the finishing touch. We found this yummy dish to go great with Spanish rice!

Chocolate Sour Cream Cookies

These cookies turned out delicious, with a the few additional ingredients that I added. I took the advice of another reviewer and added a pinch of salt and a half teaspoon of vanilla or so. Also, if you cook them a little longer, like 12 to 15 minutes and also let the dough sit for 10 minutes after being in the fridge for 15, they aren't so cake textured. A good substitution for the walnuts is almonds, and white chocolate chips. I loved these cookies with the proper adjustments.
