Nice summer flavors but a bit too salty for me. Try only 1/4tsp salt, and then add more at the end if desired.

Peanut Butter Noodles

I have made this several times now, and it is the perfect recipe for adding whatever veggie is on hand and in season. I've used carrots, broccoli slaw, cabbage, zucchini, and eggplant...all were excellent!

Chocolate Walnut Fudge

If using a different size can of milk, 5oz is about 1/2c plus 2T. This recipe is easy, and makes creamy, sweet fudge. I wouldn't change anything.

Baked Acorn Squash with Apricot Preserves

This was delicous and easy; however, I couldn't get the little ones to eat it, even though I thought that they would like this. Next time, I think that I will remove the skins and mash it a little for the kids. I personally preferred it with walnuts added.

Banana Oatmeal Cookies I

1)I only had whole wheat flour, and they were still good...kindof like bite size banana bread, just perfect for little fingers ;) 2)I used butterscotch chips, which went quite nicely with the clove and banana. For those who wanted this sweeter, just add more chips. 3) I added 1/2t salt. It slightly brings out flavors.

Blueberry Coffee Cake

This has a wonderful light texture. 1) 1/2 tsp vanilla added to the batter and 1/2 tsp cinnamon to the topping worked nicely 2) Be sure to let it partially cool before cutting and serving, otherwise the cream cheese chunks are too melted and sloppy 3)You'll get purple batter if you let frozen blueberries start to thaw before mixing 4) This is great featured with a full brunch/breakfast, but it isn't hearty enough to stand on it's own.

Eggplant Rollatini

This is pretty and tasty. I added garlic and parmesan to the ricotta (it definitely neeeds a personal touch). Although this was easy to make, it was kindof messy and took a little longer than expected. You can't step away from the eggplant while frying, or it will burn. I don't reccommend this for busy weeknights or if you have little "helpers", but it would be great for special dinners or company.

Split Pea Soup with Rosemary

I've tried other split pea recipes on this site, but this one is the keeper. 1) I didn't have a leek on hand. I added some fresh chives instead, and it still turned out well. 2) I didn't quite like how the texture of my bacon turned out (kindof rubbery). Be sure to cook it until it is very crispy, and slightly smaller pieces might work out better. 3)Whatever you do, don't sub the rosemary...it's wonderful!!!

Jalapeno Poppers of Champions

I agree with the comments about spicing up the cream cheese filling. Next time, I will try to cut off just the top of the jalapeno rather than cutting lengthwise so that less cream cheese oozes out. The cheese could be piped in with a pastry bag (or ziploc baggy with the corner cut off).

Garlic Prawns

Hubby gave this two thumbs up, and he usually drowns his prawns in butter. I didn't have a fresh lemon or orange. I just used 1 1/2Tbs lemon juice and 3Tbs orange juice, and it still turned out well.

Zucchini Brownies

Enjoyed by my preschoolers and their friends...and none of them had any clue about the zucchini. Great as is, or to save on time and sugar intake, you can skip the frosting and just lightly sprinkle powdered sugar on the top.

Eggplant Sandwiches

Excellent as is, but I do suggest adding salt and pepper to the the eggplant prior to cooking it. Select eggplant that is shiny, firm, and on the smaller side. That might help some of the people that commented about tough skin or mushy texture.

Chewy Oatmeal Cookies I

The chocolate chips and raisins are very yummy together! I add 1/2 tsp cinnamon. I have also thrown in extra shredded zucchini before (just be sure that all excess water is drained off first).

Gelatin Spritz Cookies

Very sweet and fruity; therefore, little kids love them! This recipe worked well in my cookie press (Williams Sonoma). So far, we have made strawberry flowers, and lime Christmas trees...both were very pretty.

Corn and Crab Bisque

Good overall flavor. I thought that it was a bit salty, but my husband thought it was fine (I used McCormick's Cajun seasoning). Next time I will use a low sodium chicken broth. If using frozen corn, 1 16oz bag (or 3 generous cups) worked well.
