Washington Apple Cake

I made this cake for a family gathering for the first time and it was a big hit. I served the cream cheese frosting on the side since it wasn't even needed and left it optional. I used 1 egg and 2 eggs substitutes in addition to canola oil. I have made a lot of cakes from this site but this is now one of my favorites.

Bob's Awesome Lasagna

This was an excellent recipe but I felt that it was still missing something. Maybe a can of diced tomatoes. I used fat-free cottage cheese and blended it to take out the chunks. You could not taste the difference of using the fat-free compared to whole cottage cheese because of the rest of the flavors. I think it was much better this way than using Ricotta. I used extra-lean ground beef and rinsed off the extra grease after browning. I also added a pinch of nutmeg to the cottage cheese mix. I used the largest can of Prego traditional spaghetti sauce that I could find which was enough for a 9X13 pan. also followed other reviewers and soaked my no bake noodles in warm water for 30 minutes to get them to soften. I made mine about 8 hours before actually baking. It was liked by everyone. My 16 month-old had to pieces all to him self:)

Chocolate Zucchini Cake III

This was my first attempt baking a cake with coco powder, as well as,zuchini. I will definitely be making it again. I have been craving chocolate since I needed to adapt a healthier lifestyle. I used canola oil and cut the amount in 1/2 by substituting unsweetned applesauce. 1 Large zucchini was exactly 3 grated cups. I drained the zucchini before folding it in to the batter. I also used a hand mixer to mix the ingredient. Baked mine an angel food cake pan for about 70 minutes. Frosted with the Chocolate Cheese Frosting from this site. It was a big hit and everyone loved it. I didn't tell my husband that zucchini was in it until after he said how good it was. He said it was the most moist cake he has ever had.

Chocolate Cheese Frosting

This was my first attempt at a chocolate cream cheese frosting and it was a hit with the chocolate zuchini cake from this site. I only used 3 cups of the powdered sugar, used reduced fat cream cheese, and skim milk. I used only 1/2 the coco powder that it called for because I am not one for extremely chocolately frostings. It was perfect. Used the left overs to dip our strawberries in! MMMMMMM. I think the cinnamon definitely added to the flavor. It never hurts to add cinnamon if you like it because it is good for you.

Sesame Beef

This is excellent. I followed another recommendations and substituted 1 1/2 tbs of semsame oil for the vegetable oil and it was amazing. I used round steak and marinated yellow onions. I added some water chestnuts which added the finishing touch. I doubled the sauce recipe and thickened it with a constarch mixture. Will definitely be making this again. Can't wait to try it with green onions.

Lemon-Orange Orange Roughy

This was tastey but didn't make enough sauce. I liked it but my husband didn't. I usually make mine with just lemon so I believe it may have been a little too flavorful for him.

Ultimate Twice Baked Potatoes

My husband and daughter loved these. I rubbed the outside of the potatoes with olive oil and garlic salt prior to baking. I used smart balance butter, skim milk, and fat-free sour cream in addition to the rest of the ingredients. My family couldn't even taste the difference. Next time I will use reduced fat cheese since I am sure it would not taste any difference. I sprinkled cheese and bacon bits and then baked for about 15 minutes.

Stuffed Shells III

These were really good. I made mine with low fat ricotta cheese and did not need to use any of the eggs. I cut the salt in 1/2 per other recommendations and added garlic powder. I baked mine covered for 35 minutes and then uncovered for 10 minutes. I used a large jar of Prego Sauce with a little xtra lean meat. This was my first attempt and definitely a keeper. My husband and 1-year-old son both liked them.

White Chili with Chicken

This was excellent and my first attempt ever at making white chicken Chili. I used Olive oil instead of the vegetable oil. My husband ate 4 bowls. I only used half of the jalopeno because I don't like my food spicey but I think the next time I will use the whole thing because most of the spice cooks out when you saute it.

Stuffed Green Peppers I

These were good but not the best that I have ever had. But I must add that I made it was Jennie O's xtra lean turkey meat and that may be the reason. I only used one can of tomato soup which I felt was plenty. I will definitely make it again.

Seven Layer Taco Dip

Due to diet restrictions I made this with Fat Free Cream Cheese and Fat Free Sour Cream, as well as, reduced fat cheese. I served this in a small trifle bowl and it was beautiful. Layered as follows: bean mixture, cream cheese/sour cream mixture, Salsa, tomatoes, cheese, and lettuce. The rest of my family didn't know it was reduced fat until I told them. I used PACE Mild Salsa and even after trying to strain it it was still watery. I will try a thick and chunky salsa recipe the next time.

Best Lemonade Ever

This was excellent. This was my first attempt to make homemade lemonade and it was a definite success. I followed other reviewers suggestions and heated the water and sugar mixture in the microwave to same on time for 2 minutes then chilled in the fridge. I will definitely make this again.

Party Pinwheels

These were very good and much better than the store bought kind. I made mine with reduced fat cream cheese and only 1/2 the packet of Hidden Valley Ranch Salad dressing mix. I made mine the night before. I made some with deli ham and some without. I used mission large tortillas. Next time I will try different tortilla flavors. These were well received at my son's first birthday party. Everyone loved them including the birthday boy.

Caramelized Baked Chicken

This was a very good recipe, however, I give it a four since my wings could have used a little more crisp to them. I followed other suggestions and used all of the same ingredient measurements and brought them to a boil over the stove first and added two tablespoons of cornstarch baked covered for 45 minutes and then removed foil and cooked for 15 more minutes. I will definitely try this with a chicken breast.

Apple Dip

My daughter and I love this recipe. I initially made it with regular cream cheese and due to some health changes I have started using fat free cream cheese. It tastes just the same with the fat free so I suggest trying it for a healthier twist. My daughter says you can't even taste the difference.

Tostones (Fried Plantains)

These are ok like like this, however, My family is puerto rican and I have grown up on these when made with overly ripe plantains. This gives them a sweet instead of bland taste. I don't season them with anything and just use a little butter so that they don't stick to the pan. Made this way I give them a 5 star!

Strawberries 'n' Cream Trifle

I made this for a New Years Eve party and it was a big hit. I used two 3oz packages of Vanilla pudding, 1 1/2 cups of skim milk, 1/2 cup of fat free sweetened condensed milk, and fat free cool whip. I took other suggestions and let my fresh strawberries soak in sugar for about 30 minutes prior to making this. It will be even better when I make this during strawberry season. Next time I may try adding different berries with it. My husband normally dislikes anything with angel food cake but said that the combination is so good that it does not taste like regular angel food cake. A let mine settle in the fridge for atleast 4 hours.

Quick Black Beans and Rice

I use either olive oil or canola oil since it is healthy to saute onion and minced garlic. I then use a can of diced tomatoes with mild green chiles and 1 cup of white instance rice. I drain and rinse the bean. My husband does not like as many beans so I only use about 3/4 of the can. This is really good on flour tortillas. It is filling but you feel good about what you are eating.
