Fluffy Pancakes
My go to pancake recipe! These make super fluffy cake like pancakes. I substitute whole wheat flour for all-purpose flour with no problem. I usually add cinnamon and vanilla as well. Recipe tastes best with butter, but I've also substituted 2 tblsp of olive oil and they've turned out okay. I also leave out the salt. I find I have to put a lid on the pan after flipping them, and leave the lid on for 1-2 mins...otherwise the middle of the pancakes will still be uncooked.
