Basic Flaky Pie Crust

I had a very hard time making a lattice out of this dough because it kept on crumbling on me. Note: I floured my utensils and table well.

Strawberry Spinach Salad I

Even though I did not have the sesame seeds, the salad tasted fantastic. This salad is very fresh tasting. The dressing is what makes the salad taste so great. I plan to add this recipe to my regular rotation.

Mango-Banana Smoothie

Strawberry Vanilla Pancakes

Good pancakes. My family liked it. I made the following adjustments: 1/2 cup wheat flour and 1/2 cup white flour (instead of all white flour). 1.5t baking powder instead of 2t added 0.5t baking soda Added 1t apple sauce instead of the oil. Added 1t of brown sugar. Added 1t of vanilla. Added 0.25t salt. Added 0.75 cup of milk. I took about 1/3 cup of strawberries and added some powdered sugar. I added these strawberries on top of the pancakes (along with maple syrup).

Big Soft Ginger Cookies

This is a great recipe. We all loved the cookies. Since I did not have dried ginger, I used grated fresh ginger. I did not roll the entire cookie in the sugar. I only rolled the tops of the cookies. There is no need to flatten the cookies since they flatten out on their own in the oven. I used 1/2 cup of butter and 1/4 cup of crisco for the shortening.

Carrot Cake III

This is a 5 star recipe with adjustments. I rated it 4 since it would have been too sweet if I had followed the recipe as is. I made the following modifications: 1) substituted most of the vegetable oil with unsweetened applesauce 2) halved the sugar in both the cake and the frosting as I don't like cakes which are too sweet 3) used a 50/50 mix of brown sugar and white sugar 4) used a 50/50 mix of white flour and whole wheat flour 5) increased the cinnamon by 50% 6) added some nutmeg 7) added raisins along with the pecans After the modifications, this was one of the best cakes I have made. My kids were asking me to make it again after eating it for the first time. I did not add pecans to the frosting since I thought that the pecans in the cake were enough. I am glad I made that change.

Banana Banana Bread

I am giving this 4 stars since I made some adjustments. This was a very moist bread with great banana flavor. I used a 50/50 mix of wheat flour and white flour and a mixture of 1/3 C white sugar and 1/3 C brown sugar. I also added a handful of semisweet chocolate chips. The butter was replaced with the following: 1) 6T flaxseed meal 2) 2T butter 3) 1/4 C applesauce I used about 5 medium sized bananas. I added 1t cinnamon, 1t vanilla, 1/4 t nutmeg, a pinch of cardamon,

Pastry for Double Pie-Crust

Great tasting flaky crust. I added 1 T of powdered sugar per some reviewer's advice for fruit pies. I used 1/3 cup crisco and 1/3 cup butter. I put the water and shortening into the fridge for 10 min. in the freezer prior to mixing with flour mixture. After mixing the ingredients together, I refrigerated the mixture in the frig for 20-30 min. prior to rolling the dough out.

Chocolate Covered Strawberries

Since I don't have a double-boiler, I put a glass bowl on top of simmering water. Making this dish this way is tricky since I don't have much control over the temperature. After dipping about 6 strawberries, the temperature of the bowl gets too hot and the chocolate starts getting gloppy and grainy. To fix the consistency of the chocolate, I have to add a little bit of cold water (to cool the chocolate down) and stir it up again. I added Amaretto Di Saronno to half of the chocolate. For the other half, I added Grand Marnier. Yum.

Broccoli, Rice, Cheese, and Chicken Casserole

I made the following modifications: 1) I made the rice in a rice cooker since I don't have instant rice 2) I took one lb of chicken breast and diced it instead of using chicken from a can. I sauteed garlic, 1 small onion, and one rib of sliced celery in olive oil and then added the chicken. I sauteed the chicken and cooked it completely. I seasoned it with some black pepper, paprika, and a small amount of cayane pepper. 3) I shredded about 1.5 cup of cheddar cheese 4) I layered the soup, broccoli, chicken, and chicken in the baking dish. 5) I served the dish by pouring the chicken mixture on top of the rice. 6) I mixed the soup with 1 T of mayonaise. I skipped the butter, and milk.
