Beef Enchiladas II
I tripled this recipe (3 teenage boys/husband to feed!) and used chicken breast. I let the chicken cook in the crockpot all day with a little chicken broth, a sm. can of tomato paste and spices. When done, shredded it and added enchilada sauce, some sauteed onion & garlic and more spice, couple shots of hot sauce, salt & pepper. I filled flour tortillas with the mixture and some cheese, rolled & placed on top of some enchilada sauce in pans, then poured more sauce on top. Add cheese, sliced olives and bake (unfortunately the 1 store I went to did not have green onion). My husband raved, this is a delicious recipe and easily tweaked to our tastes. This will be added to the regular rotation---THANKS!!
