Peanut Butter Balls III

Best peanut butter balls I've ever had. I do think that the sugar should be cut back some, not for sweetness but the recipe is very dry and the balls are very hard to mold. They tend to be pretty crumbly. It took me a total of three hours to make the full batch... a little excessive for me because I have two kids under two. I should've cut this batch in 1/2. Very tasty though!

Spiced Pumpkin Seeds

Great recipe. I used butter instead of margarine and they were great. I omitted the salt. I read where a lot of people like to soak their seeds then let them dry overnight... I don't do this. I boil the seeds in water for about 35 min. I then pat dry and season them. I immediately bake them starting at 200 degrees then when they look fairly dry I turn up the heat to 275 - 300 deg. and take them out when they are a golden brown. It takes longer but I have had bad luck with my seeds burning when allowing them to dry out before baking. This way my seeds always turn out perfect in the middle. They are never wet.

Sweet and Salty Caramel Apples

Good caramel apples but I suggest much less salt on the ingredients list. All you need is a couple pieces per apple. I wasn't thinking and made the mistake of using dark chocolate chips and they just don't work with the sweet, salty, and tart of the apples. I bet these are great with semi-sweet chips.

Fresh Spring Rolls With Thai Dipping Sauce

Very good recipe. I love how healthy these are! I could not find the rice papers so I cooked rice noodles and served everything over the noodles kind of like a taco salad. I served the dipping sauce on the side and people used it like a salad dressing. Everyone loved it. One thing I added was fresh mint with the cilantro. A local thai restaurant serves their spring rolls with mint and I love the cilantro/mint combination in these.

Sugar Cookie Glaze

Very easy to make, tasty... I added almond extract and the cookies turned out wonderful. I used the Best ever Rolled Cookie recipe. Next time will use less icing on the cookies. Set up really nicely but I recommend letting them set up before refrigerating if you added food coloring.

The Best Rolled Sugar Cookies

These sugar cookies are great...I used a confectioners sugar and milk icing on these and they turned out really good. I suggest if you are going to use that type of icing that you don't cover the entire cookie... it's almost too sweet. As for the taste, sugar cookies are supposed to have frosting which would change the negative comments about this cookie. The dough was easily workable and the taste was not overly sweet. That's what I look for in a sugar cookie.

Dilly Potato Salad

Definately bland. You need to add more seasonings. I added the Pampered Chef all-purpose dill mix add salt and pepper to bring out the flavors more. I also added more of the mustard.

Simple Macaroni Salad

Good quick recipe. I add some cumin, a can of shoepeg corn and a can of Goya black beans to this for more of a southwestern mac. salad. If you like spicy... add some Cayenne pepper as well.

Original Chex® Party Mix

Very good recipe. You don't need to let this cool all splayed out. I just turn my sink into an ice bath and place the bowl of mix into it, stirring once every few minutes. It works fast and doesn't change the texture or flavor.

Peach Cobbler Dump Cake II

Made it for my fiances' birthday and he took it to the firehouse. I don't like peach cobbler but this was raved about by all the guys. If it's good enough for them, it's good enough for me. One of the guys said that it is the closest thing to his grandma's peach cobbler and it "brought back memories".

Quick Chicken Marsala

Yum! Great very quick recipe. I rated it a four only because I would add a couple things to spice it up a bit. First I saute scallions then mushrooms and then add the chicken and when the chicken is browned I add thyme and a small amount of rosemary.

All I can say is WOW. This is one of the best recipies I have come across... very delicious. The only thing I suggest against is breastfeeding after eating this meal. The baby was not a fan.
