Mom's Zucchini Bread
this was my first attempt at zucchini bread and turned out fantastic! To anyone (like me) who wondered whether or not to keep the skin on the zucchini when grating, leave it on - it adds beautiful color to the bread and doesn't change the taste a bit.

Pork Brine
as another reviewer mentioned, this is very similar to Alton Brown's recipe. Alton's only uses 1/2 cup salt, and I would suggest following his. With the salt reduced you should be able to leave in the brine overnight. Definitely rinse the pork after brining!
