Garlic Corn on the Cob

Reviewed: Sep. 1, 2009
This was good but I think next time I will use slightly less butter/garlic powder, or at least spread it around more. Just a personal preference.

Chocolate Chip Pancakes

Reviewed: Sep. 1, 2009
These were fantastic. I had never made pancakes before ever, and I made these...very good. I did take another review's advice and reduce the baking powder to two teaspoons, otherwise followed the recipe exactly. It's sweet, very sweet...and filling. I would definitely like to try this with blueberries.

Taco Stuffed Shells

Reviewed: Aug. 25, 2009
Oh. My. God. So. Freaking. Good. I haven't tried a recipe on this site in quite awhile and...yeah, this totally exceeded my expectations. I cooked the onions in with the beef and etc instead of sprinkling them with the cheese...definitely used more salsa (I used HOT salsa so good!), and I baked it for half an hour at 350 and then put the cheese on and baked for another ten minutes. I think just half an hour would have sufficed though; the shells were a little bit over cooked. Didn't stop me from eating them though. I want to make more of these right away. Thank you Jennifer!

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 16, 2009
I had to leave out the bay leaves and peppercorn because I didn't have any, but it was still awesome! Very tender. I cooked it for a little under ten hours on low.

Fettuccini Alfredo I

Reviewed: Mar. 14, 2009
I tried this recipe recently when I felt like some Alfredo pasta, but didn't have any heavy cream to make my usual Alfredo sauce. This was a pretty good alternative. Feel free to add more hot sauce!

Butterscotch Brownies III

Reviewed: Feb. 15, 2009
These were fantastic!!! This is what I did: First, I followed another commenter's advice and changed the portions to the following: Reduced the brown sugar to 3/4 cup, reduced the flour to 2/3 cup, and reduced the baking powder to 3/4 tsp. Also, the boyfriend is allergic to nuts so I substituted butterscotch chips for the walnuts. Then, I realized I definitely did not have enough filling to fill an 8 X 8 pan so I doubled the recipe, with the previous adjustments, and then added that to the first batch I made. Perfect! It came out perfectly! I was planning on adding the frosting but ended up omitting it; I think it would have made them too sweet. These definitely are really sweet. They're kind of light and airy though, so they the sweetness isn't overwhelming; it's not too rich and filling. Thank you so much for the recipe!

Stuffed French Toast II

Reviewed: Feb. 15, 2009
This actually wasn't as good as I thought it would be. It's not bad, but French toast is already heavy and filling enough that the jam and cream cheese inside was just too much. The actual French toast itself was very good though. I ended up using Oatmeal bread instead of Oatnut, strawberry jam instead of raspberry (what I had on hand), and vanilla extract instead of almond (boyfriend is allergic to all nuts). I also added powdered sugar.

Chicken Penne Italiano

Reviewed: Jan. 14, 2009
This recipe exceeded my expectations. I thought it might be a little bland, but it's truly not. What a great mix of flavors, and a great way to get veggies in there. Even my vegetable hating boyfriend happily ate this. I followed the recipe almost exactly...added a little bit more garlic, and reduced the white wine by half (boyfriend's preference). Thanks for the great recipe, this will definitely go into the dinner rotation and I'm saving the leftovers from tonight for lunch tomorrow. EDIT: I just made this for the fourth or fifth time and I used yellow peppers instead of the red peppers, because I happened to have a yellow one...I would definitely recommend this for presentation purposes; there is already red in the dish from the diced tomatoes so the yellow peppers are a great color addition to that and the green peppers.

Easy Meatloaf

Reviewed: Jan. 12, 2009
Just had this for dinner and it was very good. Since it was just my boyfriend and me eating I scaled the recipe for two servings, which yielded to six ounces of meat; this was not enough meat. I used eight, and found it to be barely enough for both of us. I followed other reviewer's advice and sauteed the onion in butter and garlic beforehand...also reduced the amount of brown sugar and prepared mustard, and doubled the ketchup. Again, because I made it smaller, I also reduced the cooking time to about forty minutes. The filling ran out of the sides and looked rather...gross next to the meat (I was also not using a loaf pan - did I mention this was my first time trying to make meatloaf?), however, the meatloaf itself was divine. I think the flubs were my fault and I just need to work on it myself to scale it just right for the boy and I. ;-)

Marinated Wild Salmon

Reviewed: Jan. 8, 2009
I'm sorry to say I thought this was rather disappointing. My boyfriend said that you couldn't even taste the marinade; it just tasted like salmon. It didn't have a very appealing presentation either. It wasn't bad just...not at all worth marinating for so long. I've had much, much better salmon minus all the prep time and marinating. Thank you anyway.

New Year Spinach Fettuccine with Scallops

Reviewed: Jan. 5, 2009
This was a great recipe. I must apologize, however, because I have to admit I did alter it; I do typically prefer to try a recipe for the first time written as is before altering. However, my boyfriend doesn't like the taste of white wine (or red), and I thought an alfredo sauce would go perfectly. Consequently, I substituted the white wine and cream of mushroom soup for Rebecca Swift's amazing "Alfredo Sauce" recipe from this site (butter, heavy cream, garlic, Parmesan cheese, and parsley). It was absolutely perfect! Boyfriend told me it was so good we should only have it on special occasions. Also, I forgot to add the mushrooms - had bought them specifically for this recipe and everything - but truly I think the recipe was just fine, if not better, without them.

Chicago Dip

I've made this twice, with rye bread and with pumpernickel bread (couldn't find round Italian bread). Very good! I was worried it would be too mayonnaisey, but it's great as is. Thank you for the recipe!

Caramelized Baked Chicken

I doubled the sauce as I was using boneless, skinless, chicken breasts. The flavor didn't actually pop as much as I thought it would, but still very good. Boyfriend liked it a lot.

Poor Man's Pepper Steak

Reviewed: Nov. 14, 2008
I really wanted to like this one but...I did not so much. Boyfriend didn't like it either. The steak was okay, not great, and the vegetables were way too soft and practically falling apart. It definitely was not worth the hour and a half it took to cook it. I think it would have been a much better plan to simply omit the flour and cook the steak on the stove, adding the onion, pepper, and garlic and just left it at that.

Oven Fried Parmesan Chicken

Reviewed: Oct. 22, 2008
Great recipe! Boyfriend really liked this one. I just used boneless, skinless chicken breasts. I ran out of parsley so I threw some basil in there (not the same though, I know). I had it in the oven for a little over an hour at 375 degrees- perfect! Thanks for the recipe.
