About this Cook
I work full time and am going to grad school while raising my 14 month old cutie pictured with me. It's a busy life but I love it! In my "spare" time I spend time making photo gifts, working on my photo library, learn new things on my computer, read, swim and spend time with my family. I love to travel and hope to do more as Charlie O gets older.
My favorite things to cook
I love to cook tuna curry - a favorite since I was 8 years old. Other favorites include chicken and veggie in foil on the grill, pesto pork tenderloin, which is super easy but looks fancy for company ;) and anything in a cream sauce! I love baking Christmas cookies and always make seeral different kinds to give to neighbors during the holidays.
My cooking tragedies
I have not had a tragedy with actual food - mine was with the cookbook itself! I was living in Germany and had a flat glass plate stove in my apartment. I started cooking and smelled something burning. It turns out I had turned the wrong burner on and my Betty Crocker cookook was laying on that burner! Luckily, I saved it, but it does look questionable when I pull it out to cook from these days.... do you trust a cook with a burn cookbook?? :)

Spinach and Orzo Salad
I made this for friends last weekend - the rescipe was super easy. Instad of roasted peppers I used a jar of roasted pepper pesto. This eliminated the need for olive oil and balsamic vinegar and was very tasty. I will definitely serve again this summer!

Ground Beef Mexican Style
I loved this recipe, but modified it as others did: In addition to the ingrdients called for, I added minced garlic, taco seasoning and a can of green chilies. I stirred in about a cup of sour cream at the end. Since it is summer now I served it over Fritos like a taco salad instead of noodles. I think this made it more summer-like. We loved it!

Chicken Tortilla Soup V
I love this recipe and make it regularly with rotisserie chicken from the grocery store. This is even better with the mexican style tomatoes with cilantro and a can of green chilies.
