Spicy Chipotle Turkey Burgers
I fixed these burgers for a cookout I hosted last Friday. I couldn't get my outdoor grill fire going to medium high, I was working with a charcol grill, so it was a slow cook time that more or less smoked the burgers. THEY TURNED OUT AMAZING! EVERYONE WENT CRAZY about the burgers! I also put the mozorella cheese inside and it was an unexpected treat. They were such a hit I had to make another batch of them with 4lbs of turkey on Sunday. I did the second batch on my indoor grill. They turned out great. Just watch the chesse, you dont want it seeping out the sides. I suggest when making the patty make a well and insert the cheese then roll the patty into a ball and loosley flatten - indoor grills will continue to flatten the patty out. I loved the flavors and the chesse complimented the spices well. I did add an extra pepper per pound. An excellent recipe my friends and family can't wait for me to make again. I will say that to get decent size burgers it's best to stick to 4-5 burgers per pound. Trying to make more that number causes the patties to look like little turkey rocks Lol! Will post pictures if I can keep hands off long enough to get the camera!!

T-Bones with Onions
I loved this meal, so did the family. I fix it whenever we want to dress up a steak. I made a bit more of the honey mustard sauce and drizzled it over the steaks as they cooked it was a nice touch. My brother who detested the idea of eating onions loved them grilled with this sweet sauce.

Chuck's Come On Ice Cream (or Night of the Red Death) Chili
A Great Chili Recipie! My family LOVED it the first night but they really enjoyed themselves when we finished the left overs later in the week. The seasonings get a chance to really bring out the best in the chili. I would recommend fixing this dish but actually serving it later in the week. Now that its Fall my family is looking forward to Red Death Chili :n)
