These were super easy to make, had everything on hand in my pantry. They were delicious, too! I used vegan butter (Earth's Balance) to make them dairy free (for my son who's allergic to milk) and it worked beautifully.

Baked French Fries I

I thought they were very good, but the kids didn't enjoy them. They certainly needed more seasoning than listed. I thought I added extra, but it might need more like triple the amount.

Donna's Chocolate Zucchini Bread

This was really excellent. I added the entire unsweetened chocolate bar, 4 ounces, I think. I also added heaping cups of zucchini so it was a bit more than 2 cups. The kids absolutely love it and it doesn't need a thing on it to enjoy.

Streusel Topped Blueberry Muffins

These were really easy to throw together and delicious. I didn't have any lemons so I added a few drops of lemon juice. I made 16 muffins and they came out great. I might make a little more streusal topping next time.

Chickeny Chickeny Rice

This was good and flavorful. I've been looking for a homemade option to the flavored rice in the store and this is it! I used 3 chicken boullion and at the end when I added salt, I added a liitle garlic and onion powder. I might add some minced garlic with the onion next time.

Quick and Easy Brownies

I used only 1 cup flour as recommended. They were ok, a little on the bland side for me, I like rich, fudgey brownies. They were good average cake-like brownies.

Oatmeal Chocolate Chip Cookies I

Really good recipe with some of the modifications suggested. I used half shortening and half butter (just b/c I only had 1 stick left), I also added about 1 tsp. vanilla and baked for about 10 min. Reminds me a lot of the Nestle choc. chip recipe, but slightly healthier.

Delicious Pineapple Muffins

I followed some of the recommendations. I used a larger can of crushed pineapple and added some to the batter, along with a little vanilla extract. They came out quite good and sweet. I followed the rest of the recipe as written.

Apple Pie Filling

This came out great, even months later, still delicious. I used apples Jonah Gold apples straight from the orchard. I cut the liquid to 6 cups (4c. apple juice) which worked great for us. It made 4 large pies for us - got rave reviews each time, I still have one left.

Jam Muffins

The muffins were good, I only had grape and orange jam on hand, but they worked well. I doubled the recipe with no problems. I did not find them too sweet, they were just right. We will be making them again and again.

Easy Risotto-Style Rice

Very easy, but needed more flavor. I added some garlic powder and salt along with the cheese at the end, but it still needed some more. I might try adding onions in the beginning next time.
