About this Cook
I grew up with Southern cooking that was hearty, but bland: lots of fried food and overcooked vegetables. Now I strive for food that is light with intense flavor. I love finding ways to make simple, fresh ingredients pop. I work full time so shortcuts are the rule of the day, but I always try to make each meal special, with at least a touch of homemade about them.
My favorite things to cook
Fresh, in-season vegetables. Fresh fish. Mediterranean, Italian, Indian. Vegetarian feasts. Homemade salad dressings (no bottled dressing ever again!)
My favorite family cooking traditions
We have a pizza night that puts take-out to shame. My teenage daughter (the baker of the family) makes a focaccia crust and my husband does the cooking. I get a nice break from cooking, and my only contribution is when I add my own toppings to my section.

Peach Upside-Down Cake
Wow. This was easy-peasey and turned out perfectly. I always seem to botch anything I bake, but this turned out good, and cooked perfectly in 50 minutes. Delicious warm with vanilla ice cream. I highly recommend this for novice bakers like me who want to try a simple cake.

Addictive Sweet Potato Burritos
Refreshingly different. I used black beans and was pleased with the lovely color contrast. I served the burritos with couscous on the side, and everyone in the family thought it was a delicious meal.

Orange Coconut Salmon
Be warned: I only bought a 5 oz. bag of coconut, and it was waaaay more than enough. I coated the salmon until there was no more room for coconut! Unfortunately, after dredging egg-coated salmon through the coconut, I had to discard a very large amount. What a waste. I advise dumping a little at a time onto a plate and adding more if you need it. Don't throw away 3/4 a bag of coconut! Pretty good salmon, though. Even better sauce.
