Pumpkin Waffles with Apple Cider Syrup
Yummm...we didn't try the syrup this time, rather used our old standby which is a cinnamon syrup from a chocolate chip pancake recipe on this site. We scaled the recipe to 9 servings and got 12 Belgium waffles. Crispy outside and creamy inside...delicious recipe that we will use over and over. Thanks for sharing.

Whole Wheat, Oatmeal, and Banana Pancakes
I started to make this recipe, scaled to 9 servings and realized I had a few issues. First, I couldn't split an egg in 1/2 so I ended up using 2 eggs. Also, I ran out of oats and wheat flour. I tried to accomplish the same goal by using some ground flax in place of the lacking oats and some wheat germ/ white flour in place of the missing wheat flour. OMG...these were sooo good. Very delicious banana flavor. Cooked nicely. I couldn't have asked for a better recipe. We tried them with maple syrup and a syrup made from 1 cup honey, 1/2 cup butter, and cinnamon. While our family was divided, more of us preferred the honey syrup on this one. Yummmmm.

Chunky Monkey Pancakes
A great use of old bananas, however this recipe was wayyyyy too sweet for us. Also the crunchy nuts didn't seem to fit. If I make these again I will use less or no sugar, no nuts, and maybe even no chocolate chips. I much preferred the banana pancake recipe on this site that uses ground up rolled oats.
