Easy Morning Glory Muffins

Delicious! I used half oil and half applesauce, no coconut (I don't like it),half brown sugar and half white, added a small can of crushed pineapple, combination of raisins and dried cranberries. I only used 2 eggs because that was all I had. I made this in a loaf pan so it was Morning Glory Bread instead of muffins. Needed to bake for almost an hour in the loaf pan. YUMMY!! Debbie, thank you for posting this recipe.

Sesame Noodles

Very good! Made this last night with Firecracker Salmon and Asian Avocado. I did make a few changes (don't you hate when people review a recipe that they've changed?? I think this would have been delicious as is but changed it to meet our tastes.) I only used 2 tablespoons of canola oil instead of the 6 of safflower. I thought that would be way too much oil. I sauteed the onions and garlic in the canola oil before adding the other ingredients. I also added a tablespoon of freshly grated ginger and 1/2 cup of homemade peanut sauce. I threw the pasta and some steamed vegetables (pea pods, baby corn and baby carrots) back into the sauce and tossed while heating. Garnished with toasted sesame seeds. Everyone loved it. I'm eating cold leftover salmon and noodles for lunch right now. Delicious cold, too!! Thank you, scoopnana, for sharing this recipe.

Firecracker Grilled Alaska Salmon

This was delicious. Served it for dinner last night with Asian avocado and Sesame Noodles. I'm eating the cold salmon and noodles for lunch right now! Yummy!! Didn't have any peanut oil so I used canola oil instead. Marinated it for 11 hours while I was at work. I will definitely be making this again. Will try with different kind of fish or even boneless chicken breasts! Thank you, Christine, for a delicious and easy recipe.

Asian Avocado

I made this last night for my son, his girlfriend and my boyfriend. We all loved it! I tripled the sauce recipe for two whole avocados and served with Firecracker Salmon and Sesame Noodles from this site. The only change I made was to add about 1 teaspoon of sesame oil. I can't wait to make it again. Thank you, Josie, for a unique and delicious recipe.

Grilled Pineapple

This is delicious!! I did add quite a bit more honey and a couple of extra dashes of hot sauce. I sprinkled some cinnamon on them while they were cooking. Smelled wonderful!! I'll be watching for sales on pineapple to make this again!!

Jamie's Cranberry Spinach Salad

Mahvelous, simply mahvelous!!! I made this for an informal family dinner for 16 people. Everyone loved it! I used raw turbinado sugar because I was out of white and used EVOO instead of vegetable oil. Threw in some mandaring oranges, too. Other than that, followed the recipe exactly and it was fantastic. Several guests said they don't usually eat spinach salad but this was delicious!! I put some of the leftover dressing on cold salmon the next day and it was incredible. I think the dressing could be used for many different dishes, not just on salads.

Classic Macaroni Salad

Delicious!! I used ditali pasta which worked very well. Red pepper instead of green, personal preference. I added the optional grated carrot. Gave it a little extra color. I threw in about a teaspoon of celery seed. Only other change was rice vinegar. This salad was scrumptious! I served it at an informal family dinner for 16 people. Everyone loved it. Made it again this week, just for me!!

Balsamic Vinaigrette

Perfectly delicious! I added about 1 tablespoon of honey but I think it would have been delicious without just a bit tangier. I used regular balsamic vinegar because that's what I had. Also added a dash of rice vinegar. Poured this over a Chef's salad - diced tomatoes, cubed cheese, diced chicken (from a rotisserie chicken), diced cucumbers, roasted cashews, etc and it was out of this world!! I will keep this dressing on hand from now on. It takes about one minute to prepare and is absolutely define! Thanks for sharing the recipe!

Byrdhouse Marinated Tomatoes and Mushrooms

Wonderful! I followed the recipe exactly except for using grape tomatoes. Marinated it overnight and added a diced avocado 30 minutes before serving. My son and bf loved it! I can't wait to eat the leftovers for lunch today. The dressing had just the right "bite." Will be making this often. I think it would be delicious served over grilled chicken breasts.

Fried Rice I

Outstanding!! I cooked the rice the night before, adding chicken boullion to the boiling water. Used red onion instead of green and sauteed it in the bacon fat after frying the bacon. Added water chestnuts and shredded carrot in addition to the peas. This dish was just wonderful. My son doesn't eat pork. I'm going to try making it with salami instead of bacon next time. I think it will be delicious!! This is a keeper!

Black Beans and Rice

Wonderful! I made a few changes but I know it would have been excellent as written. I sauteed the onion, peppers and garlic in a little olive oil. I added cumin, cayenne and garlic powder with the other seasonings. Instead of tomato sauce I used a can of Rotel tomatoes. The cayenne and Rotel made it quite spicy but my bf loves really spicy food. Finally I used saffron rice instead of white rice which made it very colorful. It was a huge hit! I served it with Fish Tacos. I think it would be delicious as a main dish with some grilled chicken breast added. Thumbs up for a great recipe!

Beer Bread I

Amazing! I made my own self-rising flour per other reviews. Threw in a handful of cheese. Brushed top with melted butter before baking. It was delicious but will be better next time when I use fresh baking powder instead of "past the use by date" and add more cheese. Sifting the flour and using fresh baking powder make a big difference in your final product! Want to try it with herbs or nuts or toasted sesame seeds, too. I used Shiner Bock but want to experiment with different beers. I ate this toasted with some honey butter. BF ate it plain. We both loved it!

Cranberry Sauce Extraordinaire

Amazing! I made this last night to serve tonight. It was delicious warm last night and even better chilled this morning. I followed the recipe exactly. I will be making this often! It will be perfect on baked brie for New Year's Eve!
