Spinach and Mushroom Pinwheels

Instead of making the pinwheels, I used puff pastry and put a small square in a tiny muffin pan and then filled it with the filling. I added sour cream and garlic to the filling--with those changes they were great.

Hungarian Mushroom Soup

I also thought this soup was of a gravy consistency--I had to add more milk to thin it out a bit and dilute the spices. Use half as much dill and paprika and then increase to taste. You can always put more in but you can't take it out.

Absolutely wonderful! Nobody could get enough of it. I used Splenda instead of sugar but don't make any other changes. It is great as it is.

Excellent! I am going to double the recipe when I make it next it went to fast. I didn't have heavy cream, just added milk and it came out great.

Sugar Coated Pecans

Fabulous! I add them to baby greens with gorgonzola, dried cranberries and raspberry vinagrette for a wonderful salad. My kids eat them as a snack. A lot cheaper than buying them ready-made at the grocery store.

Spicy Stuffed Squid

This was spectacular! I used already cleaned squid. I didn't have stewed tomatoes so I used diced canned tomatoes and I didn't have anchovy paste but I did have a can of anchovies so I took 4 of them and just smushed them up. The little bit of sweet and spicy was wonderful. Don't be overwhelmed by the ingredient list, it was very easy to make.

I used panko bread crumbs and fat free sour cream. We just got back from Octoberfest and he couldn't stop raving about this recipe--this will be a staple in our house. Now if I could only make beer!

Chili I

The chili was fabulous!!! I noticed that several people commented on the expense of the spices--you can get wonderful spices REALLY cheap at an Indian store or any ethnic store. You can also buy the spices whole at the Indian store and grind them yourself. Toast the cumin seed in a dry frypan until lightly browned and put them in a pepper mill and crush when needed--adds great flavor to any dish it calls for.

I loved this recipe. I also used 4 cucumbers but added red pepper and cilantro. I also used Splenda 2/3cup instead of the sugar but next time I will try it with a 1/2cup since it was a bit too sweet.

Black Bean and Couscous Salad

My husband loved this recipe. I doubled the dressing except for the oil and used freshly ground toasted cumin seeds. I lightly grilled some tomatoes and served the salad over the top. It was fabulous!

Black Bean Soup II

My whole family loved this recipe with a few minor adjustments. I pureed half the soup to thicken it, I used 2 cans of chicken broth and a 1/4 cup dry sherry, I added a canned chipotle, chopped for a smokey flavor and also added a touch of dried oregano for a flavorable soup.

Best Cream Of Broccoli Soup

I made the recipe as is but instead of the roux, I added a Jalapeno Cheddar flavored Maruchan Instant lunch, cooked it until it was thickened and then blended it with my hand-held blender. I then added additional milk until I got it to the consistency I wanted. It added a wonderful flavor and it was so easy! Next time I might try it with a macaroni and cheese packet without the noodles.

Creole Catfish Fillets

Very easy and extremely tasty. We LOVED sauce! It is nice to have a sauce that is low fat and that you can eat without guilt. We were putting the sauce on our steamed vegies and our baked potatoes. I doubled the recipe for the sauce and used cajun seasoning instead of making the one listed.

Slow Cooker Manly Stew

Eggnog Cookies II

This is the first time I ever threw out a batter after making one batch. It tasted like flour and that was about it. The texture was poor and the taste was really bad. The kids and I hated them. I think the recipe must be off in the amount of flour used. Denise
