Broccoli and Stilton Soup

My husband went nuts when he tasted this! He can't stop eating it. I added garlic and an extra can of chicken broth because it was very thick. I also added extra stilton---just because I love it. I am going to make this for my gourmet New Years Eve dinner I am making for friends.

Brownie Biscotti

I added a total of 1 cup of sugar and 1/2 cup cocoa powder to make them a bit sweeter. I added enough Kahlua to the dough until it wasn't falling apart and crumbly before I baked them--they came out perfect! I dipped them in melted chocolate chips with Kahlua mixed in...To Die For!

Anise Biscotti

Very Yummy! I made them exactly as called for---next time I will at least double the anise extract and add more anise seeds because I love that anise flavor. I did make a cookie icing and used anise extract instead of vanilla to give it that extra anise flavor. A Keeper! Thanx

Lime Chicken Picante

Great low calorie dish. I cut my chicken breast into bite size pieces, doubled the marinade but only used half of it to marinade it so I would have enough to make a sauce. I would cut down on the mustard the next time.

Make-Believe Middle Eastern Chicken

I didn't have cream so I just doubled the sour cream (used fat free), mixed the spices in the sour cream and added a can of tomatoes, didn't have stewed tomatoes. I also added some toasted almonds. I liked it! Very different but really easy. I will make it again. Make sure you salt and pepper your chicken.

Fennel in Wine and Honey

YUMMY! I cut up my fennel, roasted my mustard seed first and then added the rest of the ingredients and....YUMMY... the most interesting combination I could have come up with... a little sweet and savory. A winner.

Hamburger Hash Browns

I found the hash browns took 1/2 hour--I finally turned up the oven to 400 degrees to get them nice and crunchy. Sautee real onions and garlic, splash in a bit of worcestershire sauce to give it a deeper flavor. I also added both corn and peas---Yummy!

Southwestern Turkey Casserole

I made a lot of changes--used 1 can of cream of mushroom soup, 1 can Rotel, 1 can green chili's, 1 can rinsed and drained black beans, and 1 can corn (I would have used cream corn if I had it), 1 packet spicy taco mix and cumin along with the other ingredients. I mixed it all together and then layered the tortillas, the mix and cheese and baked--VERY YUMMY! I will make this again with chicken.

This is THE BEST recipe ever! It does not need any adjustments. I didn't have a cheesecloth so I just added all the ingredients in the pot and picked out the big pieces when I saw them. Very authentic and delicious.

Easy Chicken Korma

I cut my chicken in bite size pieces, stir fried them and then added the sauce. I also added some unsweetened coconut as some others suggested. I doubled the sauce but not the onions. It really doesn't taste like Korma, but it is good. I will make this again.5/20 Update: I made this again and used a whole pint of fat free yogurt and if the spices said 1 tsp, I used 1 TBSP for each spice. Don't put the Turmeric in a plastic food processor, it will stain, wait till after you process it to put in the tumeric. I also processed about 3 TBSP almonds and that helped thicken the sauce. It came out great and tasted more like Korma.

Sicilian Brasciole a la Lena

I made this for the Soprano's final episode party (which was disappointing) but the recipe was the hit of the party! A couple of suggestions to make this easier and tastier: mix the onion mixture with the bread crumb mixture and add enough EVOO to make it bind and then spread it on the meat. I also used panko bread crumbs and Italian seasoning to give the stuffing more flavor. I used toothpicks to keep them all together and they worked great. Add a little bit of red wine to the spaghetti sauce for flavor and use the crock pot for very tender meat. I was in a hurry so I used the high setting for 5 hours and it came out perfect. I will definetly make this again!

Cilantro Chicken and Rice

The only thing I did differently was to add leftover chicken and some cumin. I also added the cilantro in at the end to keep it green and fresh tasting. It does make a lot but my kids have already asked me to make another batch! They loved it!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

How can you mess up beef tenderloin and blue cheese! I grilled the steaks and then put them under the broiler just to crunch up the topping--yummy! And the sauce really makes it.
