Easy Chicken Korma

I cut my chicken in bite size pieces, stir fried them and then added the sauce. I also added some unsweetened coconut as some others suggested. I doubled the sauce but not the onions. It really doesn't taste like Korma, but it is good. I will make this again.5/20 Update: I made this again and used a whole pint of fat free yogurt and if the spices said 1 tsp, I used 1 TBSP for each spice. Don't put the Turmeric in a plastic food processor, it will stain, wait till after you process it to put in the tumeric. I also processed about 3 TBSP almonds and that helped thicken the sauce. It came out great and tasted more like Korma.

Lime-Curry Tofu Stir-fry

Unbelievably yummy! The only change I made was to sauteed minced green onions and chopped garlic with the ginger. I love the maple syrup/lime juice in this! Don't skimp on the basil at the end. This will be a staple in my house for tofu or chicken or anything!!!

Mango Gazpacho

This is so amazingly refreshing!!! I didn't have jalepeno's but I can't wait to taste it with those in it. I also had to use roasted red peppers in a jar. I added both cilantro and basil!!! Yummy!

Fire Roasted Tomato and Feta Pasta with Shrimp

YUMMY! I doubled the recipe and did as others suggested by adding the feta cheese to the sauce at the end to thicken it up. I also added chopped Kalamata olives to give it an extra mediterranean flair to it. Restaurant quality recipe.

REALLY disappointing! I was so excited about this recipe. Try Casablanca Chili on this site instead...SOOOO much better and tastier. This was very bland and needs a lot of help.

Banana Banana Bread

I couldn't leave this recipe alone. I added 1 cup chopped pecans, a bag of butterscotch chips, decreased the brown sugar to 1/2 cup. Added 3/4 teaspoon baking powder, 1 1/2 t. cinnamon, 3/4 t. nutmeg and a smidgen of nutmeg. OMG!!! Baked them in a muffin tin, got 18 muffins out of it. Don't leave out all the banana's! Freeze old banana's when they get black in the peel and just keep adding to the freezer bag. Peel them first.

LOVE this! I used extra curry powder, 1/2 ground lamb, 1/2 ground beef and I use 1 1/2 cups water with a packet of beef gravy instead of the beef broth and cornstarch.

Pear and Blue Cheese Salad

AmaZing salad and incredibly easy to make. I made the Microwave Spiced Pecans on this site, which were very easy to make and used canola oil since I didn't have the walnut oil. I served it for company and it was an immediate hit!

Roasted Red Pepper and Tomato Soup

Not worth the time and effort. I tried it both ways, with and without cream in it. It is better without it. I thought the taste was somewhat bland. I ended up adding some balsamic vinegar and extra sugar to give it some taste. Topped it with fresh basil. It tastes more like tomato soup than roasted pepper soup.

Glazed Dijon Carrots

The mustard is the secret ingredient in this recipe. I used Hickory Farms Sweet and Hot mustard because it sounded like it would be good and it was GREAT! I am going to try Honey Dijon mustard the next time. Everyone loved these.

Cabbage and Smoked Sausage Pasta

I didn't have smoked sausage so I added 1 package Hebrew National hot dogs, 1 chipotle sausage, and some leftover pork chops and a few slices of leftover lunchmeat. I added an onion and cut the oil and butter in half. I also added some creme fraiche when I eat it. Yummy.

Poppy Seed Bundt Cake III

I added buttermilk instead of water; 4 TBSP poppy seeds and 2 teas. almond extract. I made individual "bundt" muffins and topped them with 10X sugar mixed with almond and vanilla extract and milk. Very moist, dense and delicious!

Orzo with Parmesan and Basil

OMG! This couldn't be any easier and so versatile! I quadrupled the recipe for a party, added sauteed mushrooms with the cheese and basil. It tastes like a creamy risotto without the hastle. Next time I am going to add some sauteed or roasted garlic to it. Thanks for a great recipe.

Spicy Beef Curry Stew for the Slow Cooker

I added sweet potatoes, parsnips and carrots to it. I also added extra curry, a touch of ginger and garam marsala because I love the spices. I cooked it in a deep frypan on simmer. I also coated the meat in flour and it came out perfect and amazing.

I loved this! I used feta and parmesean cheese at the end. I only had regular black olives and it worked out well. Next time I will pan fry the fish and then seve with the sauce. When I baked the fish, it was very watery.

Pork Tenderloin with Dijon Marsala Sauce

VERY easy and good. I used fat free half and half...my sauce curdled immediately and I had to use a bit of cornstarch and water to thicken. Use dry marsala and mushrooms...any kind. I used a can of straw mushrooms I had. I will double the sauce next time. I could just eat the sauce poured over jasmine rice and be happy!

Apricot Chicken with Balsamic Vinegar

The family LOVED this and it couldn't have been any easier! I used cornstarch in a little bit of water to thicken the sauce and I added 1/3 cup balsamic vinegar and 1 teaspoon dried thyme. A definite keeper!

Marinated Mushrooms II

I used button and crimini mushrooms. I cut the big ones into 4 pieces for easier eating. The only thing extra I added was cut up marinated red peppers for color and taste. Excellent!
