Basic Crepes

This is a great recipe. I have made this over 10 times now and it is so good. I used to eat the crepes at IHOP all the time and I am so glad I can make this at home now. Each time I follow the recipe but to the batter I also add 1/4 cup powdered sugar and 1 tsp vanilla extract and 1 tbsp honey. I like the flavor it adds. By using a hand mixer to combine you will get the smoothest batter. I usually top mine with fresh strawberry, blueberry, and blackberry. If I dont have fresh fruit I will use the raspberry preserve I always keep on hand. Top with syrup for the most indulgent breakfast ever!

15-Minute Dinner Nachos Supreme

This was really good for a quick and easy meal. I was feeling mexican tonight and this totally hit the spot. Being a vegetarian,I used Quorn brand meatless crumbles. I put this in the pan with the taco seasoning and since I did not have tomato soup I just used tomato sauce. I also added a can of corn and black beans all together with the rice and other ingredients. Just brought everything to a boil and reduced for about 7 mins. I guess with the other ingredients it took longer for the rice. The crumbles were already cooked just needed to be heated so I did not bother to cook first. Ta-da! Dinner! Put the mixture in separate bowls for my boyfriend and I and we each topped with cheese, salsa, sour cream, onion, and jalapenos and used chips to scoop. Thanks for posting! I will definitely make again when looking for a quick lunch or dinner.

Baked Dijon Salmon

This was AMAZING!!! My boyfriend and I loved it! I am not a very big mustard eater but this was so good. I used a large 1lb salmon filet and did not cut it up when cooking. Without any dijon on hand I used 2 tbsp whole grain mustard from central market and 1 tbsp honey mustard. Everything else I kept the same. I spread this on thick then sprinkled the bread crumbs over the salmon leaving out the nuts. Baked for 10 mins then broiled for additional 3 mins to get the crust crispy. Excellent! Served with long grain wild rice.

Spinach Dip With Cajun Pita Chips

This recipe was great! I didn't use pita though, I used sourdough. I also added the seasonings to the dip as well as the bread and included cayenne pepper and chili powder to increase the heat. After toasting the bread for about 5 minutes, I topped it with the dip and mozzarella cheese then broiled for 2 minutes. It was amazing!
