I love to cook! Some of my fondest memories are in the kitchen. I remember my Grandma teaching me to make scrambled eggs, I actually had to stand on a chair to learn. When I am in the kitchen and cooking I feel good and it feels so wonderful to make something that my husband and boy's enjoy as well. It is really a sense of accomplishment. Lasagna, Eggplant parmesan, Eggplant roll ups, southern comfort food like fried green tomatoes, and macaroni and cheese. I've been experimenting with making soups as well and they have been super tasty! My mom and I would always make fudge for friends, neighbors and even the postman! I make a really incredible Eggplant paremesan that is rolled up and stuffed with wonderful cheese! Fantastic. It is my favorite, I just wish my husband liked eggplant. When I first got married I had a gas stove and I burnt everything. I got used to it and well I wish I had one now!
