About this Cook
I grew up in North Carolina but within the past year moved to Rochester Mn with my husband. He does 99% of the cooking and is good at it, but sometimes I like to get in the kitchen and get my hands dirty, too!
My favorite things to cook
I love southern cooking, usually the greasier the better. However, since my digestive tract does not work as good as it used to, i have been trying to eat healthier. I LOVE greens with ham, ham and bean soup, mac and cheese, beef stew, home baked bread. I am interested in recipes that are inexpensive, relatively easy, and yummy. I really like comfort foods.
My favorite family cooking traditions
Growing up, my mom was not the best cook in the world, but God knows she tried. However, she always made the best stuffed green peppers and wilted lettuce salad, and i have not been able to duplicate that.
My cooking triumphs
My husband and I have, with the purchase of a Zojirushi bread machine, ventured into the world of breadmaking with surprising success! Since we bought this handy gadget, we have not bought store bought bread in almost a year, and it is so rewarding and delicious.
My cooking tragedies
The biggest tragedy is that I can't cook more often

Bread and Celery Stuffing
very good basic recipe for stuffing. The only reason for 4 and not 5 stars is that i feel like it could be seasoned a little more, but other than that, a good recipe

Make-Ahead Meatballs
absolutely the BEST meatballs....with a few adjustments. Instead of 4 lbs of hamburger, i used 1 lb hot sausage to three lbs of hamburger. I also put 3 tablespoons of worchestershire sauce instead of two, and instead of 1 tablespoon of salt, I used 1/2 tablespoon seasoning salt and 1/2 tablespoon garlic salt. I also added 1 1/2 cups of mushrooms and increased the amount of onion to 1 cup. They turned out to be the best meatballs i have ever had, and my husband and I look forward to a lot of leftovers!!!

Easy Apple Crisp with Honey
I really liked this recipe and i would recommend this, with a few tweaks. I chopped about 1 cup of pecans in the food processor and mixed it into the crisp mix. I also would omit the water and lemon juice because it tends to make it watery on the bottom, because the apples make their own juice, especially with the honey. Along with the cinnamon, i also sprinkled 1/4 tsp of nutmeg and allspice to spice things up a little bit. Served hot with ice cream, this is one rockin' dessert. Think i'll get me another scoop while i am thinking about it.......
