Double Chocolate Brownie Cake
Amazingly moist cake with a full, rich flavour. I used Devil's Food cake mix and pistachio pudding mix--turned into a yummy chocolately and nutty combo! I baked it in a 9x13 baking dish (because I don't own a Bundt pan) for 35 min and it was cooked perfectly. Instead of frosting the cake I drizzled it with a caramel sauce recipe I got from this site. I can't wait to make it again and experiment with other cake mix and pudding flavours!

Mocha Chocolate Chip Banana Muffins
W-O-W!!! Awesome recipe, delicious taste and a great texture (slight crust on the outside, soft and moist inside). I made this after reading other reviews and followed others' suggestions of using half margarine half applesauce, and 1/2 cup Splenda with 1/2 cup brown sugar (total of 1 cup was definately sweet enough). Being a huge coffee lover, to intensify the coffee taste I added a whole 1/4 cup of cold brewed coffee (had to add a tiny bit more flour so the batter wouldn't be too liquid). I also don't own a food processor so was doing the 1st step by hand, and wasn't able to get all the chunks out of the mashed bananas, however I thought this really added to the finished product. I will definately make these again!! I think next time I might try adding some flaked coconut.

Orange Muffins
Nice simple, healthy recipe with a delicate orange flavour. The kitchen smelled like heaven! I made these over the holidays for my family and they were met with rave reviews. After reading other reviews I followed some of the suggestions: used fat free plain yogourt instead of oil, subbed Splenda for the sugar, added extra OJ (just sort of eye-balled it until the consistency of the batter looked right)and doubled the amount of orange zest. I also folded in a generous 1/2 cup of sliced almonds, which really added to them. I will definately make them again but next time will add even more zest and maybe some orange extract to really make them orange-tasting!
