Spicy Sausage and Rice Casserole

This was really delicous. I used risotto and cooked it on the stovetop. I used almost a quart of chicken broth, adding more as it was absorbed, and it came out rich, creamy and with just a hint of spice. (I only used about 1/4 tsp of cayenne.) I used frozen pepper strips and only a 14 oz can of diced tomatoes. My husband LOVED it. Just realized that the recipe called for breakfast sausage. I used chicken italian sausage (just 3 links) and it was perfect.

Creole Seasoning Blend

Great flavor. I cut the peppers in half and cut one tablespoon of the paprika to suit my family's palate. It was the perfect amount of heat for us.

Andouille and Chicken Creole Pasta

My family loved this recipe. I had never made "creole" anything and was very pleased with the results. I made the recipe as is, with the exception of rice instead of pasta and chicken italian sausage instead of andouie (I had it on hand.) I made the creole seasoning from a recipe on this site. Great fat Tuesday meal!

Hearty Turkey Soup with Parsley Dumplings

My husband made this soup the day after Thanksgiving and it was absolutely delicious. He did not make the dumplings, choosing to add egg noodles toward the end of cooking instead. He also added one large potato, cubed. That and the rutabega seemed to add a wonderful depth of flavor and a silky texture. Otherwise, he followed the recipe exactly. I can't wait to cook another turkey just so we can enjoy this soup again!

Easy Roasted Pork

Delicious and quite easy. Used foil because I did not have the oven bag. Meat was moist and perfectly cooked. Even delicious the next day.

'Day Before Payday' Kielbasa and Corn Hash

My family liked this recipe very much. I have made it twice. The second time I used fresh bell pepper and onion rather than frozen and the result was much superior. I won't use the frozen pepper mix again.
