Asian Tuna Patties

I was not happy with this recipe at all. I made it as directed, just leaving out the teriyaki sauce. The patties were dry and without much flavor. I will not make this again.

Corrigan's Minestrone

This didn't work for me. It was way underseasoned and, after the macaroni cooked, had no broth left in it at all. Flavor was also missing. It probably would have been better to saute the onions and garlic until browned before adding the rest of the ingredients. I'll pass on this minestrone.

Pumpkin Zucchini Bread

It was perfect. I made it with zucchini from my CSA box and pumpkin I grew myself (the puree came out of my freezer). I added 1 cup of chocolate chips to the recipe to ensure that my daughter would eat it (she did). I baked it for 50 minutes. Yum!

Peachy Bread Pudding with Caramel Sauce

I omitted the caramel sauce because the recipe was sweet enough as is. I didn't peel my (organic) peaches), only chop them up coarsely. I used challo instead of French bread. I used Lactaid instead of water, hoping my lactose intolerant family will try the pudding. I figured that the lactase enzyme from the Lactaid would also work on the sweetened condensed milk. We'll see. The pudding turned out quite tasty!

Southern Peach Cobbler

Excellent just as is. I made mine in a 9x12 pan. What I did not do was skin the peaches. No need and too much work. My organic peaches (including skin) baked up nicely and made a delicious cobbler!

Grilled Sausage with Potatoes and Green Beans

It came out great, but I did make some significant changes. I preheated the oven to 425 degrees. I used 1 pound potatoes, halved them, and sliced them into 3/4" pieces. I used frankfurters instead of smoked sausage. I sauteed the green beans and 2 minced garlic cloves in a skillet over high heat for 5 minutes. Then I used the same pan to sear the franks in 1 tsp Worcestershire sauce. I put the beans and the franks into a large bowl together with the potatoes, the onions, 1 Tbsp olive oil, 1/2 tsp thyme, 1 tsp salt, 1/4 tsp pepper, and 1 tsp paprika. I mixed it all together and put it into a greased casserole along with 1/3 cup water. I covered it tightly for 25 minutes and continued to roast it uncovered for another 20 minutes. My husband and daughter loved it.

Hungarian Goulash I

This was excellent. I made it exactly as the recipe said, only I did add 3 Tbsp Worcestershire sauce and 2 Tbsp ketchup to it, as someone else suggested. I served it on rice instead of noodles, as that's what my (Latino) husband prefers. It took my meat 2 1/2 hours to cook. I used chuck - so do factor that into the cooking time. Oh, yeah. I did add two carrots, 20 minutes before the end of the cooking time which I had previously peeled and cut into large chunks. I guess I'd been remembering the goulash my mom made when I was a kid. Too bad I don't have her recipe, but this will do instead.

Easy Arugula Salad

Excellent recipe. It's easy to make and tasty to eat. Here's what I did. I toasted the pine nuts before using them. I had no cherry tomatoes so I cut two roma tomatoes into pieces the size of a cherry. I added 1/4 of a red onion, thinly sliced. I increased the amount of Parmesan cheese to 1/2 cup. I used 1 tsp salt and 1/4 tsp black pepper in the dressing. I tossed the salad ingredients gently first. Then I whisked together the dressing ingredients. Finally, I added the dressing to the salad and tossed everything gently but thoroughly. My husband and I loved the result.

Strawberry Rhubarb Coffee Cake

This is the best rhubarb recipe I've ever made. It's amazing!! The rhubarb/strawberry mixture is sweet and tasty. The top is crunchy. The only change I made to the recipe is that I used fresh, sliced strawberries (1 pint) instead of frozen ones. I added just a smidgen of water to the pot when I started cooking the strawberries and rhubarb so they wouldn't burn. I also had to bake it for 55 minutes instead of 45.

Robin's Quinoa with Mushrooms and Spinach

A very nice recipe! This was the first time I ever cooked quinoa so I wasn't sur ewhat to expect. It was a little mooshy, but the taste of it was great. My husband liked it, but my daughter woudln't even try it because there was spinach in it. I'm going to save this as a Passover recipe because we can't eat rice, but we can eat quinoa! :)

Heavenly Chipped Chocolate and Hazelnut Cheesecake

This is a very rich and delicious cheesecake. My only suggestion would be to make all the crust ingredients (except for the melted butter) at once in the food processor (instead of chopping each one separately. I had lots of fun making (and eating) this cheesecake with my daughter. It cracked right away, we covered it with chocolate, and no one was the wiser! :)

Apple Shortbread Pie

This recipes gets thumbs way up from me. The underneath crust came out crispy, sweet, and slightly brown. The pie itself was very tasty. The best thing about it is that this is a complete pie without any dough-rolling at all. Cheers! I made no changes to this recipe except letting the pie bake for an additional 5 minutes to be sure it was done.

Bean Soup With Kale

Great use of kale! Thanks! I made this soup with only a few changes. I couldn't find my Italian seasoning (until the soup was already made and like my soup well spiced), so I added 1 tsp basil, 1 tsp oregano, 1 tsp rosemary, 1/2 tsp thyme, and 1/8 tsp cayenne. Instead of blending, I just used a potato masher to mash the contents of one can of beans and cooked everything together all at once for 20 minutes. It was so easy and tasty that my husband, who said he wasn't hungry, decided to eat two bowls of it! :)

Cornbread Pancakes

Garlic Broccoli Spears

Excellent recipe, quick to make and delicious to eat! Remember to whisk the dressing ingredients briskly in order to pull out the full flavor of the minced garlic. I'd suggest using olive oil rather than vegetable oil. Don't let the broccoli get soggy!!

Er, you left something out of this recipe! Didn't you forget to add the apple juice? I thought the cookies were fine, but probably will not make them again because I prefer crisper cookies.
