Hi everyone. I've been around for a while. Finally signed up in November. And am finally doing my profile. i'm 30 years old from new mexico. i grew up learning to cook new mexican food, but i love all kinds of food and like to try new things and exotic recipes. I now live with an Italian from New York and i've also been inspired by that world.
My favorite things to cook
I love to cook spicy food. I put chile in just about everything and will figure out a way to spice up any dish. I like to try new things, new ingredients. I try to cook healthy, but don't give too much concern to numbers and all that, nor do i give concern to measurements. It's all "a little of this, a little of that!"
My favorite family cooking traditions
Tortillas, tamales, menudo and posole, juevos rancheros... there's nothing greater than a family coming together for the day to make dozens of tamales.
My cooking triumphs
I cook pasta perfectly. I have a method for every kind of pasta. I make a great carne adovada that is easy to prepare and you leave it in the oven over night and let it cook as you sleep. i'll post the recipe sometime...
My cooking tragedies
sopa's. i have a hard time with them. I'm a beginner at baking. Mostly because I forget things are in the oven ;)!

Pizza Dough I
where i live (the southwest; dry climate, high altitude) you have to proof the yeast and you have to double or triple the yeast in every recipe. we also have to let the dough rise. those things are absolutely necessary if you live in a climate like mine. i tried this recipe anyway, just to see if it had some magical power that might work, and it tasted like a cracker. very hard and crunchy. i wish it did work though, cause it seems so easy.

Easy Paella
despite the long list of ingredients this is pretty easy. i would add another cup of rice and quadruple the garlic and add more peppers to make it hotter. more rice to match the amount of meat it is immense! i fed 7 people with this. guys. and we had leftovers. i used mexican saffron. spanish saffron is too expensive. i added some red chili powder to the meat(i love it spicy). more salt and pepper. all the meats together tasted wonderful. everybody loved it. this one is in my recipe box and in rotation.

Three Berry Pie
this pie as awesome. as someone before recommended i use 4 berries instead. raspberries, blueberries, blackberries, and strawberries. berry yummy.
