Yummy Quiche
Great! Very rich and tasty. The filling is too much for one pie crust though. I used 2 deep dish ones. To cut back on fat, you could use reduced fat cheeses & fat free half&half and still have an excellent quiche. I didn't have green chiles so used a can of Rotel drained and some chopped green pepper. Got the same flavor as the chiles I think.

Swiss Cheese 'n' Onion Quiche
Pretty good!!...I didn't use the butter in the crust. Added several slices bacon chopped up, and sauteed the onions (just used a small one) in the bacon grease instead of butter. Sauteed some green pepper & mushrooms too. (Need to drain veggies & soak up the extra grease with a paper towel) I used a bar of swiss cheese grated & it turned out to be more than 2 cups but used it all. Also skipped the salt & flour, but used black pepper & a sprinkle of red pepper flakes. Cooked mine @ 350 degrees for about 45 minutes. Letting it sit for 10-15 minutes before cutting is important unless you want something like scrambled eggs. This is a good basic quiche that you could add almost any meat & veggies to. Or don't add anything....just the egg, cheese & half & half mixture cooks up great. I like the swiss cheese but you could use any type.

World's Best Peanut Butter Fudge
Good fudge! I was looking for a recipe that I could make with ingredients on hand. (didn't have evaporated or condensed milk, chocolate chips, powdered sugar, etc.) I didn't have marshmallow creme but used 1/2 bag (about 8oz) of miniature marshmallows. Didn't have the required amount of peanut butter either, so used what I had & added 1/2 cup Hersheys cocoa to the mixture to be boiled. So it was really chocolate fudge but I could also taste the peanut butter. Also, I boiled it much longer than 5 minutes. Didn't have a candy thermometer & I was pretty sure 5 minutes wouldn't be enough, so I cooked it to the soft ball stage. Didn't want to take a chance of it not setting up! Used real butter in the recipe & also to grease a glass 9x13 baking dish. Very rich & sweet, much better than the quick & easy recipes!! Gave it a 3 star because of the cooking time....I read a lot of the reviews that said it wouldn't set up, and that's due to the 5 minute boiling time.
