BBQ Chicken Pizza I

Reviewed: Sep. 16, 2009
STOP! You must get 2 meals for one with this....Night #1 Make the "Tender Barbecued Chicken" from this site with chicken breasts and serve with Sun Dried Tomato wraps. Night #2 use the left over chicken to make this pizza. (Cilantro and Jalapenos go well with both wrap and pizza)

Tender Barbecued Chicken

Reviewed: Sep. 16, 2009
As a fellow teacher, I agree this recipe is easy and yummy! I omitted the lemon and added garlic per other reviewers advice. I used 4 chicken breasts cooked on low for over 9 hours (I was at work) then shredded chicken(it literally fell apart with the touch of a fork). Served on Sun Dried Tomato Wraps with cheddar cheese. Saved left overs to make BBQ Chicken Pizza the next nite. (Cilantro and Jalapenos make a nice addition to both the wrap and pizza).

Anniversary Chicken I

Reviewed: Aug. 16, 2009
I skip the saute as on less step makes it that much faster. I simply marinade the chicken in the sauce, put in a shallow baking dish, pour on the Ranch and bake. The last 5 minutes I add the cheese and bacon. This recipe is easy and yummy!

Jalapeno Chicken II

Reviewed: Aug. 12, 2009
I'd give this a 5 star but I made modifications. Instead of italian dressing I used an Asian marinade (soy, brown sugar and garlic). I then split the chicken breasts and stuffed with cream cheese and diced jalapenos. I topped it with a slice of bacon and then baked. Yummy! Therefore I give it 4 stars as it is a good starter recipe to play with.

Shrimp Scampi Bake

Reviewed: Jul. 23, 2009
I have made this twice now and both times were fabulous. I used frozen shrimp scampi from Aldi's. I mixed the dijon mustard and lemon juice then tossed with the frozen shrimp in a shallow baking dish. Then I added sliced zuchinni to the baking dish. As the shrimp/zuchinni baked I made a box of pasta (garlic/olive oil)on the stove top. Once finished (approx 10 minutes depending on the box of pasta) I added the pasta to the shrimp baking dish and topped with shredded parmesan cheese and panko bread crumbs. I baked again till brown.

Tomato-Cream Sauce for Pasta

Reviewed: Jul. 23, 2009
I'm giving this a 5 for super easy. To make it with meat I topped off the pasta with Chicken Picatta from Sam's Club found in the frozen section. The chicken picatta comes with 2 trays so double the sauce recipe and freeze half. EASY & YUM!

Sage Pork Chops

Added rosemary and paparika to the rub. Also browned minced garlic in the butter. Finally instead of water and broth/cubes I used white wine and 1 tblsp of balsamic. I followed others suggestions and made a sauce by adding cornstarch/cold water. WOW!

I had to keep adding for this to taste good. It was just too bland. I added garlic powder, taco seasoning, cilantro and lemon juice. Will try other recipes in the future.

Really good! Crushed crackers in a baggy, dipped chicken then threw in baggy and shook. Took other reviewers suggestions and drizzled mix over chicken half way through cooking...only baked 2o minutes as I used tenders

Super yummy and easy! Used salsa instead of diced tomatoes. Only addition I made was squeezing one lime into the crock pot.

Chicken Cordon Bleu I

Reviewed: May 15, 2009
Okay I have had 2 chicken cordon bleu recipes on this site and both are YUMMY! The other you must saute which gives it a nice crisp texture. However, this recipe falls under Quick and Easy; only requires the oven and for the section it falls under Q&E I give it a 5! I butterflied the chicken to put the ham and swiss inside. Dipped in butter and rolled in seasoned bread crumbs. Also poured 1/4 cup of white wine in the bottom of the pan to keep moist. As for the sauce I cheated and used a Knorr's Hollandaise Sauce and poured over at the end.

Simple and Yummy indeed! I cut up the chicken and then marinade. You can also sprinkle any seasoning after putting on kabobs...we used a carribean seasoning which was perfect with this sauce!

Exquisite Pizza Sauce

Reviewed: Mar. 29, 2009
Okay all the 1/4 of this and that...just use Italian Seasoning. I didn't have grated parmesan on hand so I used 1 Tbsp of the shaker parmesan. I followed advice of others and halved the honey, it was a perfect sweet but not too...We LOVE this sauce and will NEVER BUY pizza sauce again!!! UPDATE, made again but with tomato sauce and omitted the water...STILL AWESOME!
