Sweet Coated Pecans

Easy and fabulous! Simply sweet, we will be making this again and again. The whole family loved them! I did brown sugar for a small part, maybe 1/4 c, of the sugar. LOVE IT!

#1 Pumpkin Spice Cookies

I LOVE these! I thought they might be a little heavy on the spices, but the balance was perfect, and I love the slightly different texture the oats add. These will be in my favorite cookie file for sure! I didn't add the nuts, no one here likes nuts, but the light muffin like texture is perfect!

This was really good, but I like a little more flavor to a sauce. I may try adding some Asiago cheese next time. It is very similar to one of my restaurant favorites!

I loved this! I had to make a substitute for the heavy cream (1 c. lowfat cottage cheese w/ 3 T powdered milk, blender for 5 min). Still, LOVE IT! Would be good with chicken or veggies tossed in, and with a little more sauce.

This was a very simple and yummy start...but we felt like it needed to be thicker to stand on its own...we'll be adding some instant potato flakes for a little extra flavor and thickening next time. Thanks!

Buttermilk Pound Cake

This wasn't what I was hoping, I was looking for something sweeter, but we improvised and it made a fabulous base for a trifle. It was the perfect texture and the sweetness went well with fruit and pudding. YUM!

Caramel Brownies II

So yummy!! I used half and half in place of the evap. milk, and I left out the nuts, but this was amazing and I'm not usually a fan of brownies. Not too chocolatey and just the right amount of caramel to be heavenly!

Amazingly Easy Irish Soda Bread

WOW! My family loved this bread! It reminded me of basic baking powder biscuits, but a little richer, and a loaf took less prep time than the biscuits. Yummy! We served it warm with a little honey butter and will be serving it again soon!

Overnight Apple Cinnamon French Toast

We LOVED this recipe! Our oven acted funny, so I'm not sure about how long it took, but it was fabulous! We skipped the maple syrup and broil step because of the pan we used, but followed the directions exactly otherwise and we will be making it again soon...the kids want to have it everyday!!!

Award Winning Soft Chocolate Chip Cookies

Woo-hoo these are good! I use one box vanilla, one cheesecake pudding...I like it a little better. And I use mini chips, but we stick to the recipe otherwise. I have done these as a bar cookie and it makes about one jelly roll pan and a 9x13. As a bar, you bake about 20 min...until they are golden across the top.

Throw Together Mexican Casserole

My family loved this, it was far better than it looked. It makes more than the four servings listed...maybe eight adult servings. We added shredded cheddar, hot sauce, and sour cream as optional garnishes, and used corn chips to scoop it up like a dip. It was a major hit with my young family. We did leave out the taco sauce and replace it with additional tomato sauce to make it a little milder.

Island Kielbasa in a Slow Cooker

Yummy! Very sweet, which my family loves, but simple is what really makes it a keeper. We loved it served over rice and found that it cooks well in a covered stoneware baking dish if there isn't time for the slow cooker.

Whole Wheat Bread II

This is the first Wheat Bread I've tried outside the bread machine. I did have to add about 2 additional cups of flour to get the right consistency, but that was the only adjustment I made. We pulled it out of the over and tried it immediately and the kids and I all thought it needed a little something, but with the honey butter on top, we inhaled it! It's very filling, but not too heavy, and I like the texture the home ground wheat flour gave to it. I'll be making this frequently!
